Clam Sauce with Linguine

This recipe is incredibly quick and simple. A favorite of mine. My children also adore it. Nevertheless, on occasion I use 1.5 pounds of noodles. You can also use fettuccine. Tastes much better when paired with a garden salad and freshly baked French bread or rolls. Pour yourself a beautiful glass of red wine to celebrate the great occasion.

Ingredients

  1. 1 (16 ounce) package linguine pasta
  2. ½ cup butter
  3. 3 cloves chopped garlic
  4. 1 pound fresh mushrooms, sliced
  5. 2 (6.5 ounce) cans chopped clams with juice
  6. ½ cup chopped fresh parsley
  7. 1 teaspoon salt
  8. ½ teaspoon ground white pepper
  9. ¼ cup grated Parmesan cheese

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  2. Melt butter in large skillet over medium heat. Saute garlic and mushrooms until golden brown. Stir in clams with juice, parsley, salt and white pepper. Cook over medium heat until hot. Toss with pasta until evenly coated. Serve garnished with Parmesan cheese.

This is a great recipe!!! However you should not cook canned clams for so long. It makes them rubbery. Add them in last second just to warm them.

I made half the recipe and adjusted it a little by adding old bay seasoning that another reviewer mentioned, garlic salt, and cornstarch to thicken up the sauce. It was delicious! I’ve been looking for a white sauce pasta recipe for awhile.

My kids and I LOVED IT!! They said it tasted like The Olive Garden. I doubled the recipe, added 2 pounds of clams in the shells, and white wine. It was delicious!!

Love this! I made a few changes like others have suggested: Near double garlic 1/4 c white wine 1/4c olive oil (instead of vegetable) 1/4t dried basil 1/4t lemon pepper Shaved cheese I sauteed the garlic in 2tb butter until fragrant and starting to become golden, added the dried basil and some parsley, and the remaining butter until melted. I added the wine and simmered, clams (with juice) and simmered, then olive oil. I added a little shaved cheese, and some premade roux to thicken, and then pasta water until desired consistency. Would DEFINITELY make this again!
