Delicious, simple stir-fry dish. Fresh and delicious flavor!!! brought up by my father. Although the recipe seems lengthy, you may quickly prepare it. Also, feel free to substitute any vegetables you prefer for those included in the recipe, or to finish it off with water chestnuts or bamboo shoots!

Ingredients

  1. 2 cups all-purpose flour
  2. 2 teaspoons baking powder
  3. 2 tablespoons white sugar
  4. 1 teaspoon salt
  5. 2 cups milk
  6. 2 eggs
  7. 2 tablespoons vegetable oil

Instructions

  1. In a large bowl, stir together flour, baking powder, sugar and salt. Add milk, eggs and oil; mix well.
  2. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown.

I had to make alterations to the recipe due to the items I lacked. I replaced the 2 cups of milk with 1 cup of buttermilk and a cup of water. I also added a teaspoon of vanilla and separated my eggs so I can whip the egg whites and fold them in at the end. The waffle came out light and fluffy. I thought they were perfect but my son said they weren’t sweet enough.

These were honestly really good. 2 tbl sugar was plenty of sweet to them. And, c’mon people, let’s be honest: waffles are just a vehicle for butter and syrup. This was a great recipe that worked well in my belgian waffle maker.

This recipe turned out great!! I made a double batch and got about 9 waffles out it. (I have a Belgian waffle maker) I did add some vanilla to the batter. The waffles freeze well too. This is much better than the mix in the box! Healthier for you too! Like any recipe you can modify it to your liking.
