In this casserole supper recipe, layers of fried eggplant, seasoned ground beef, tomatoes, and cheeses are simply layered and baked until absolutely scrumptious.

Ingredients

  1. 2 cups white sugar
  2. 3 eggs
  3. 1 cup butter, melted
  4. 2 ½ teaspoons vanilla extract
  5. 1 ¼ cups all-purpose flour
  6. ¾ cup unsweetened cocoa powder
  7. ½ teaspoon baking powder
  8. ¼ teaspoon salt
  9. 1 cup milk chocolate chips
  10. 2 (8 ounce) packages cream cheese, softened
  11. ¾ cup creamy peanut butter
  12. ¼ cup white sugar
  13. 1 egg
  14. 2 tablespoons milk

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking pan.
  2. In a large bowl, beat 2 cups sugar and 3 eggs together until foamy. Stir in the butter and vanilla. Combine the flour, cocoa, baking powder and salt; stir into the egg mixture. Stir in the chocolate chips. Reserve one cup of the batter, and spread the rest into the bottom of the prepared pan.
  3. In a medium bowl, beat the cream cheese, peanut butter, 1/4 cup of sugar 1 egg and milk until smooth and creamy. Carefully spread the peanut butter batter over the layer of chocolate batter. Drop reserved chocolate batter, by tablespoonfuls onto the peanut butter layer. Cut through the batter with a knife to swirl.
  4. Bake for 35 to 40 minutes in the preheated oven, or until brownies are set when shaken gently. Cool completely before cutting into bars. Refrigerate until serving.

This was fantastic! I used less cream cheese and more peanut butter. In fact, I used chunky peanut butter and it was wonderful! Oh and I used dark chocolate chips instead of milk chocolate. All of these tweaks were just my preference and not necessary. Overall, a great recipe.

I work as a cook in a nursing home and made these for their dessert one night. These brownies are so tasty and we’re a huge hit! I followed some of the other reviewers advice by using only half the cream cheese and doubling the peanut butter.

Delicious and really easy! I reduced cream cheese to 8 ounces and increased peanut butter to 1-1/2 cups. I also had to increase cooking time to 50 minutes. Will definitely make again.

Everyone loved these. I did not get a picture but they were beautiful. I only had one brick of cream cheese but had read a review where a woman was in the same situation and they turned out great. I cooked about 38 minutes and they were perfect. The edge was dark but in no way burnt. Thanksgiving newbie. I want to make them again with two blocks of cream cheese to see if they are better. These were rich. They did not have a huge peanut butter taste but they were so good no one cared. Easy too. Heated with scoop vanilla ice cream was amazing and better than anything you could get at a restaurant.

This is a definite favorite recipe. I made several changes: 1 package of cream cheese, 1-3/4 cup of sugar in ‘base’ mixture, 1-cup peanut butter, 3/4-cup butter, 1/2-cup chocolate chips. Added 2-tablespoons PB2. As suggested by other reviewer, combined room temperature cream cheese, peanut butter and PB2 separately ahead of time.

Unfortunately, the cream cheese flavor overpowered everything else. I couldn’t taste the peanut butter at all, and it would’ve been OK with a cheesecake brownie taste if the cream cheese had been sweeter. Instead it tasted just like brownie with plain cream cheese on top.

These were amazing!! I left out the chocolate chips. Perfect sweetness, perfect texture, perfect flavor! Brownie part was perfect, PB/cream cheese part was perfect. These are now a family favorite! ***UPDATE***I substituted unsweetened applesauce for half of the butter, and it turned out just as awesome, just less fat & calories!

I baked mine in my multi- function rice cooker, so they took an hour and a half to bake, but turned out pretty good. I cut back on cream cheese like others suggested, and wished I wouldn’t have. I can taste it, but it only makes me want to taste it more. I upped the peanut butter to 1 cup, and that was good. Next time I make it, I will bake in oven and follow the recipe exactly to see if I get even better results.

Pretty good. I thought the chocolate portion could have sweeter, for my tastes. But it got rave reviews when I took it in to work. Might try altering it later, but I’ll keep it in my recipe book! I added PB chips into the cream cheese mixture akong with the PB.

I made this yesterday for the first time. I’ve never made brownies from scratch before! I was nervous because the batter seemed so thick to me, but they baked beautifully! I was so excited. I had been craving PB brownies. One thing to note, I almost added way too much cream cheese because I saw it said 2 packs, I didn’t realize it was 2 3oz packs. I already had 8oz in the when I noticed so I just left it and it turned out great anyways.

Used Light Domino sugar, GF flour, Xanthan gum and soy milk. Made the peanut butter topping first and then the brownie mix. As the brownies cooled, they got better. Might use the peanut butter mix for PB pie. YUMMY.
