Ingredients

  1. 1 pound bulk mild Italian sausage
  2. 1 ¼ teaspoons red pepper flakes
  3. 4 slices bacon, cut into 1/2 inch pieces
  4. 1 large onion, diced
  5. 1 tablespoon minced garlic
  6. 8 ¾ cups chicken broth
  7. 6 potatoes, thinly sliced
  8. 6 cups chopped fresh kale
  9. 1 cup heavy whipping cream

Instructions

  1. Cook and stir Italian sausage and red pepper flakes in a Dutch oven over medium-high heat until sausage is browned and crumbly, 10 to 15 minutes. Transfer sausage mixture to a bowl.
  2. Stir bacon into the same Dutch oven and cook over medium heat until bacon is crisp, about 10 minutes. Drain fat, leaving a few tablespoons of drippings in the Dutch oven.
  3. Stir onion and garlic into bacon; cook and stir until onions are soft and translucent, about 5 minutes. Pour chicken broth into bacon mixture; bring to a boil. Stir potatoes and kale into broth; cook until potatoes are tender and soup is flavorful, about 15 minutes.
  4. Stir sausage and heavy whipping cream into soup, reduce heat to medium, and cook until soup is heated through, about 5 minutes more.

Great soup. I made it vegan by subbing out Italian sausages with Field Roast Italian Garlic & Fennel sausages. Took out the garlic but kept the onion. Instead of chicken broth used water with adobo seasoning and used County Crock Plant based whipping cream. Absolutely delicious!!

Really good base soup to just add some ingredients for enhancement and be done quickly. So the intention is still achievable but I personally had to work this recipe to get enough flavor.

Def would make this again. Add more red pepper flakes if you like any spice at all – I couldn’t taste them and I’m a wimp. Also add salt & pepper for flavor. One note, if you are slicing the potatoes as directed and you don’t peel them, the skin boils off into what looks like noodles. It’s weird. I might chop the potatoes into chunks next time. But overall this is delicious and I will savor every bite and then make it again!

I subbed sweet potatoes for regular and a can of coconut milk for the cream. Added 2 TBSP of curry and yum! Thai twist on an Italian classic. Also dairy-free!

This recipe was really good. The only thing I would mention is that the recipe calls for a dutch oven but does not say what size. This recipe makes a lot of soup and my dutch oven ended up being too small so I had to switch to a larger pot. It didn’t hurt the soup but heads up to whoever else tries this. This was tasty enough to make me shop for a larger dutch oven.

I used 2 cups of kale that I food chopped up into Very small pieces . Other than that I added the whipped cream into the individual bowls then freeze the leftovers. Great soup 5 stars.

I followed the recipe (eventually). I forgot to pour in the heavy cream after I tasted about a half a cup worth. It was delicious without the cream but I went ahead and added it. I grow dinosaur kale in the backyard and so I’ve always used kale in Zuppa Toscano soup anyway and I’m not a spinach fan. I used mini yellow potatoes I sliced thinly. this is an excellent recipe. Thank you very much for sharing.

So I don’t own a Dutch oven however you can use skillets and a pot. It really was super easy. It’s delicious. I did cheat a little. I bought precut bacon just to save time. I used all fresh veggies and store bought organic chicken broth.
