Ingredients
- 1 ½ tablespoons vegetable oil, divided
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 pound medium shrimp – peeled and deveined
- 1 cup (1 small) chopped onion
- 1 (1.25 ounce) package taco seasoning mix
- 3 tablespoons water, or as needed
- 6 (10 inch) flour tortillas, warmed
Instructions
- Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the red and green bell peppers, and onion. Cook, stirring frequently until peppers are hot, but still slightly crisp, about 5 minutes. Remove from the skillet and set aside.
- Pour the remaining 1/2 tablespoon of oil into the skillet, and add the shrimp. Cook, stirring occasionally, until pink and opaque. Reduce heat to low, and return the peppers and onion to the skillet. Stir in taco seasoning and water so that everything is evenly coated. Simmer until peppers are heated. Serve in warm tortillas.

Delicious and very easy to make!
I used a fajita seasoning packet instead of taco. Also mixed the fajita seasoning in the water and let the shrimp ‘marinate’ while I cooked the peppers and onions. When I added the shrimp I set aside the rest of the seasoned water then added it to the pan when I added the peppers and onions back to continue cooking them. It turned out delicious!
Tasted ok but nothing special. Not sure if I used too much taco seasoning, or it just overpowered the shrimp, because I could not taste the shrimp. Cooked peppers for almost 10 minutes and the red pepper was still very hard. Will not make again. Have made better (but more difficult) shrimp tacos/fajitas.
I made the recipe as written, but I think the taco seasoning overpowered the shrimp; it didn’t complement it. So next time I will either use about half of the taco seasoning mix or make my own. I guess it’s all what suits you. Good “base” recipe.
Super easy to make. I’m going to marinate the shrimp next time to boost flavor.

This was quick and easy to make. I like taco seasoning enough (and it made it so much easier to do), but in the future I would probably make a lighter seasoning to enhance the flavor of the shrimp. But if you want quick and easy and tasty, this is the way to go.

I give it a five star cuz I mixed it up a bit!! I made it the same as the recipe said for the filling but I used the fried taco recipe for the shell (tortilla) and added chopped spring mix lettuce and cheese and came out incredible!! Love the idea of the fried tortillas! Not to crispy and not to soft! U gotta try it!!!

Awesome is the only way to describe this recipe. Easy, quick with a sophisticated taste. Followed the recipe for the most part, except these minor changes. Used Fajita packet seasoning instead of taco (as that is all I had on hand), added hot pepper flakes while frying the peppers and onions & 1/2 cup of fresh rough chopped cilantro. Served it with Mexican rice & beans. OMG it was so yummy. It is great recipe as I always have frozen peeled shrimp, Fajita seasoning, peppers and onions on hand. Thank you so much for sharing this wonderful recipe with us all.
These were good, but felt they needed something. I can’t decide what. I think I will try the cucumber salsa that another person mentioned and/or fresh tomato.
