Ingredients

  1. ¾ cup butter
  2. 1 cup white sugar
  3. 1 egg
  4. 2 tablespoons corn syrup
  5. 1 teaspoon lemon extract
  6. 2 cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1 teaspoon baking powder
  9. ½ cup white sugar

Instructions

  1. In a medium bowl, cream together butter and 1 cup sugar until light and fluffy. Beat in egg, corn syrup, and lemon extract. Stir in flour, baking soda, and baking powder. Cover dough, and chill in the refrigerator at least 1 hour.
  2. Preheat oven to 325 degrees F (165 degrees C). Line a cookie sheet with parchment paper. Roll chilled dough into walnut sized balls. Roll balls in remaining sugar, and place on the prepared cookie sheet.
  3. Bake 12 minutes in the preheated oven, or until lightly browned.

I liked them fresh out of the oven…just a little crunchy outside, but chewy inside. I did use orange extract instead of lemon, cause that’s what I had on hand (and I like orange more anyway). I did double the amount of extract after reading reviews. I’ll have to try them again after they’ve cooled off and see if they stay soft inside at all. They are simple, but yummy.

I used applesauce instead of all of the butter I use xylitol for the sugar I used lemon juice and almond extract with whole wheat flour healthy and good.

cookies came out small and hard as a rock, the dough needed about 1/8 oil along with the 3/4 c butter. The dough was like a crumble topping cough.l Bad, Bad, Bad!!!! I bake a lot

They were very good. They do bake a bit too big but I guess that’s my fault. I have to make the dough balls smaller. Next time I think I willdouble on the lemon extract. Other wise it was delicious.

Really good. I took the suggestion of another reviewer and added lemon zest. I used fresh squeezed lemon, so I added extra. These are not very sweet, which may be preferable to some. Next time I’ll add another 1/2 c of sugar. Thanks for the recipe!

These cookies are quite yummy! Super easy to make and very lemony! I substituted dark corn syrup for the light because that’s what I had leftover from Thanksgiving pecan pies and I added a tad more lemon extract and the zest of one lemon. I may cut back on the sugar a bit next time since you also roll the cookies in sugar before baking just to suit my preference, but I would highly recommend these cookies. They are going to be great with a hot cup of tea!

These are delicious simple to make cookies I would double the lemon extract add a pinch of salt but otherwise they are simply delicious chili on the inside with just the right amount of Chris on the exterior I used a simple cookie scoop to make them into the small balls if you’re cooking on convection I recommend about eight minutes cook time
