Marry-Me Chicken with Lime

This lime chicken recipe convinced my BF to propose to me. In your mouth, it will melt. Be careful, it’s quite limey! Penne pasta and steamed vegetables should be served.

Ingredients

  1. 1 cup Italian-style salad dressing (such as Newman’s Own®)
  2. 1 cup Key lime juice (such as Nellie and Joe’s)
  3. ½ teaspoon dried tarragon
  4. 1 dash hot pepper sauce (such as Tabasco®)
  5. 1 pound skinless, boneless chicken breast halves, sliced
  6. cooking spray

Instructions

  1. Whisk Italian dressing, lime juice, tarragon, and hot pepper sauce together in a large glass or ceramic bowl. Add chicken and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 20 minutes.
  2. Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler. Spray a baking sheet with cooking spray.
  3. Remove chicken from the marinade and place on the prepared baking sheet. Pour the remaining marinade around and on top of the chicken.
  4. Broil in the preheated oven until no longer pink in the center and the juices run clear, 20 to 30 minutes, flipping pieces halfway. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I made this recipe nearly as written, I used chicken breast tenderloins instead of sliced chicken breast. I put the chicken in the marinade in the morning and cooked for dinner. Mine took 25 minutes under the broiler flipping every 10 minutes. As the recipe blurb says this recipe is LIMEY, so much so it overpowers everything with its limey-ness (and we love lime!). It was not a winner in our house. Thankfully i’ve been married to my husband for 23 years so I wasn’t hoping this meal would lead to a proposal and at this point my husband knows sometimes dinner might not be a winner. He and my son gave this recipe a 2 while my daughter and I gave it a 1.
