Ingredients
- 2 tablespoons butter
- 1 ½ pounds skinless, boneless chicken breasts, cut into 1-inch chunks
- 1 medium green bell pepper, diced
- 1 (16 ounce) jar salsa verde
- 1 (12 ounce) package frozen cauliflower rice
- ¼ cup chicken broth
- salt and ground black pepper to taste
Instructions
- Melt butter in a Dutch oven or large pot over medium-high heat. Add chicken and cook, stirring occasionally, until browned on all sides, 7 to 10 minutes.
- Add bell pepper and cook, stirring occasionally, until tender-crisp, about 3 minutes.
- Stir in salsa verde, cauliflower rice, and broth. Reduce heat to medium and cook, stirring occasionally, until cauliflower is tender and chicken is cooked through, about 7 minutes.

Wow! Very tasty for so few ingredients! Minor adjustments – I used a red pepper because that’s what I had, and I chopped my fresh cauliflower in small florets as opposed to ricing. I like things spicy, so I added some cumin to my chicken when it was sauteing, and used medium spicy salsa verde. Oh, and I started with a saute of garlic and onions, because that’s how I start practically every dish. I’ll definitely make this again!
First time making it…. turned out good
I was skeptical about the high ratings, but I had all the ingredients and wanted a quick recipe, so I made it anyway. I only had a 22 oz. Package of cauliflower chunks, so I just threw them in the food processor until rice consistency. Otherwise I followed the recipe as is. I served it topped with cheddar cheese and corn chips crushed on top. It’s really very good! My husband is asking for more!
Great recipe, simple and tastes great. The only alteration I made is I cooked it down a little longer to get the thickness I desired as it was a little watery for me personally.
My husband and I loved this. I did add some chopped garlic, but other than that, made just as the recipe said. Enough for a second meal!!!
This was excellent, and easy to make. I like my food spicy so I added 3 Serrano peppers. Aside from the addition, I made it this as written. I’ll make this again.
