Chicken & Broccoli Alfredo with Fettuccine

This recipe for pineapple chicken thighs in the slow cooker is a favorite of mine. great when served with rice. To give your salad dressing more tang and flavor, add 3 to 4 teaspoons of your favorite ginger-carrot dressing.

Ingredients

  1. 1 tablespoon I Can’t Believe It’s Not Butter!® Spread
  2. 1 ½ pounds boneless, skinless chicken breasts, cut into strips
  3. 1 (16 ounce) jar Ragu® Classic Alfredo Sauce
  4. 1 (12 ounce) package frozen broccoli florets, thawed
  5. 1 (12 ounce) package fettuccine, cooked

Instructions

  1. Melt Spread in large nonstick skillet over medium-high heat and cook chicken, in batches if necessary, stirring occasionally, until chicken is thoroughly cooked. Remove chicken and set aside.
  2. Stir Sauce and broccoli into same skillet. Bring to a boil over medium-high heat. Reduce heat to low and simmer covered, stirring occasionally, until broccoli is heated through, about 5 minutes. Stir in chicken and cook, stirring occasionally, until heated through, about 2 minutes. Serve over hot fettuccine and sprinkle, if desired, with grated Parmesan cheese.

Was having a dinner party for 5 adults and needed a simple receipe. This was delicious! Made some changes to increase amount. Used 1 head fresh broccoli, blanched. Used 2 # chicken tenders. Increased Alfredo sauce to 2-12 ounce jars. Added a small amount of 1/2 1/2 as fresh broccoli is not watery and it needed more liquid. Had enough fettuccine and sauce left over for another meal for myself plus an extra 1-1/2 cups sauce. Guests loved it! Pasta bowls were scraped clean! This is my new go to receipe!

I thought this was very good! I cooked the chicken in the oven (‘allrecipes’ Seasoned Oven-Roasted Chicken) also, I used fresh broccoli, adding it to the boiling fettuccine noodles during the last 4 minutes of cooking.

Made this with penne pasta instead of fettuccine it turned out great! Everyone loves it, seasoned the chicken while it cooked and used Prego sauce! Definitely will make it again!

Again, I’m sure it’s my cooking, but it came out so dry. I added more milk, but still needed a lot more. Otherwise, it could have been a tasty dish.
