Hearty Cabbage and Ham Soup

Ingredients

  1. 2 tablespoons unsalted butter
  2. 2 celery ribs, sliced
  3. 1 medium onion, chopped
  4. 1 large carrot, diced
  5. 2 teaspoons all-purpose flour
  6. 6 cups chopped cabbage
  7. 6 cups chicken broth
  8. 1 pound cubed fully cooked ham
  9. 1 pound red potatoes, chopped
  10. 1 teaspoon dried parsley
  11. ¼ teaspoon ground thyme
  12. ¼ teaspoon dried marjoram
  13. ¼ teaspoon ground black pepper
  14. ½ cup frozen peas

Instructions

  1. Melt butter in a large stockpot over medium-high heat. Add celery, onion, and carrot; sauté for 4 minutes. Stir in flour and cook 1 minute more.
  2. Add cabbage, broth, ham, potatoes, parsley, thyme, marjoram, and ground pepper. Bring to a boil over medium-high heat; reduce heat and simmer until potatoes are tender, about 30 minutes.
  3. Stir in peas and cook for 10 minutes. Ladle into bowls and serve.

Very good basic recipe. I made some changes due to missing a couple of ingredients. I used Herbs de Province in place of thyme & marjoram. I added my garden roasted cherry tomatoes. I didn’t have potatoes. I used the juices from 2 roasted chickens that I saved along with both chicken and vegetable stock in equal measure to the recipe. I didn’t add peas. It was delicious!

Delicious and I even forgot the peas! I used 1/2 vegetable broth and 1/2 chicken stock, and with the flavorings, it was so tasty… ham, potatoes, cabbage… delish! Will definitely make again!

I have made this recipe 3 times now and we love it! It’s very easy to do and very delicious. I think it is a good recipe for adding or substituting your favorite vegetables or meat but I only have done it exactly as it is.
