I add a little toasted sesame oil to the brown rice as it cooks to give it a nutty flavor. I adore this dish. It reheats easily after freezing. Occasionally, if I feel like having some meat that week, I will add cooked sausage to the recipe. Apart from that, it’s a filling, hearty meal. Serve alongside my preferred savory sauce or mushroom-walnut gravy.

Ingredients
- 12 prickly pears
- 2 cups water
- ¼ cup freshly squeezed lime juice
- 1 ½ tablespoons stevia sweetener (such as Truvia®)
- 4 fresh mint leaves, or more to taste
- ice cubes
Instructions
- Cut prickly pears in half lengthwise and scoop out flesh with a spoon. Process in a blender until smooth. Push pulp through a fine mesh strainer to extract about 1 1/2 cups juice. Discard pulp.
- Place prickly pear juice, water, lime juice, stevia, and mint in a blender. Blend until smooth. Pour into two 16-ounce glasses filled with ice.
- Handle pears with a kitchen towel when cutting in half and scooping out flesh. Pears are covered with tiny thorns that are hard to see.
- Use the sweetener of your choice.
