My family loves this dish for balsamic-sauced lamb chops. It tastes fantastic because of the thyme and rosemary. It serves four people, but if, like us, you prefer two chops per person, you should double the recipe. Just keep in mind that the sauce will reduce more slowly if you do.

Ingredients
- ¾ teaspoon dried rosemary
- ½ teaspoon dried thyme
- ¼ teaspoon dried basil
- salt and pepper to taste
- 4 lamb chops (3/4 inch thick)
- 1 tablespoon olive oil
- ¼ cup minced shallots
- ⅓ cup aged balsamic vinegar
- ¾ cup chicken broth
- 1 tablespoon butter
Instructions

- Mix rosemary, thyme, basil, salt, and pepper together in a small bowl; rub onto chops, coating both sides. Place chops onto a plate, cover, and let sit for 15 minutes.

- Heat oil in a large skillet over medium-high heat. Cook chops in the hot skillet until no longer pink in the center, about 3 1/2 minutes per side for medium-rare. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Transfer to a serving platter and keep warm.

- Add shallots to the skillet; cook and stir until just browned, 2 to 3 minutes. Pour vinegar into the pan and bring to a boil while scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add broth; cook and stir until sauce has reduced by half, about 5 minutes.

Love this recipe! The only thing that I did differently was used regular onions because I didn’t have an shallots. I also used Blackberry balsamic vinegar which I used before and let me say Delicious…mmm good.
Best lamb chop I’ve had!
This recipe is a winner. Use hood basalmic vinegar. I substituted onions for shallots and Italian seasoning for all the spices. My family thought I put a lot of work into this basic meal. Restaurant quality, weekday effort.
This was delicious and the lamb chops were cooked perfectly. I did double the recipie because we had 8 chops but really, the balsamic reduction would have been fine without doubling.
I made this for the first time and this recipe was spot on! We recently went to dinner and my husband had this dish, with garlic mashed and string beans. I fixed this and he said he would never go back to a restaurant again to get this dish. I had 8 chops; I double the ingredients to “T” and this came out perfect. I used onions and it was still perfect. From some reviews, I think the lollipop chops cooks the best. I wanted to take a picture but by time I returned, his plate was clean. Had one left over!

We love marinated lamb chops but this recipe with the reduced sauce was quite tasty! Will make again.
I will say my chops were a lot thicker than the recipe called for. With that being said, I was really underwhelmed. The meat itself had no flavor at all. The seasonings were fine, I just don’t plan on ever making it again. I definitely prefer a good ribeye or a filet.
My boyfriend found this recipe 3yrs ago on ALLRECIPES and wanted me to make it for his birthday. It was amazing! He loved it! It was easy to follow, and I loved that this recipe requires minimal ingredients. I will said that the narrator on video is spot on regarding using good quality balsamic vinegar. I have cooked this recipes a few times now and this last time, I ran out of my good balsamic, and the sauce took longer to thicken and it didn’t taste as rich as when I use Trader Joe’s brand. Also, my boyfriend loves onions , so I double the shallot portion. He loves this recipe and it’s my to go meal for him! Thank you ALLRECIPES!
I love this recipe and have shared it with friends and family. My only change is in the kind of balsamic vinegar I use. I have some wonderful 25 year old balsamic vinegar which is very thick and wonderful! So I combine it with some great fig balsamic vinegar (1:1) to make the 1/3 cup I need. I also recommend making some crescent rolls or crusty bread so you can catch every last drop of the reduction.

Very good as is, but a bit basic. For more of a fine presentation, sautee a few garlic cloves and deglaze the pan with booze – my preference is bourbon
Very nice flavor, and pretty simple to do. My chops were thicker than I thought, I guess, as they were a little underdone at 4 minutes per side. I used minced onion instead of shallots, and my balsamic was pretty cheap, but the reduction turned out well enough anyway. Although, when I added the onions and balsamic to the pan, they tried to kill me with a chemical attack! Strong vapors to make me cough and make my eyes water! It settled down pretty quickly, but I had to wash my glasses.

This recipe came together quickly and was delicious making it perfect for weeknight or special occasion meals. I used vidalia onions instead of shallots because that’s what I had on hand. Otherwise, I followed the recipe exactly. The balsamic reduction was so tasty and made this dish special.
