Texas Cowboy Stew

With kielbasa sausage, cumin, chiles, and chili powder for some Southwest flair, this simple cowboy stew dish is flavorful and nourishing. Although it can be made quickly and easily on the stovetop, a day of simmering in a crockpot yields the greatest results. Serve with a straightforward green salad and cornbread.

Ingredients

  1. 2 pounds ground beef
  2. 2 pounds kielbasa sausage, sliced into 1/2 inch pieces
  3. 1 medium onion, chopped
  4. 2 cloves garlic, chopped
  5. 4 cups water
  6. 2 (15.2 ounce) cans whole kernel corn, with liquid
  7. 2 (15 ounce) cans pinto beans, with liquid
  8. 2 (14.5 ounce) cans peeled and diced tomatoes, drained
  9. 1 (14.5 ounce) can diced tomatoes with green chile peppers, with liquid
  10. 1 (10 ounce) package frozen mixed vegetables
  11. 4 medium baking potatoes, peeled and diced
  12. 2 teaspoons ground cumin
  13. 2 teaspoons chili powder
  14. salt and pepper to taste

Instructions

  1. Gather all ingredients.

  3. Cook ground beef in a large skillet over medium-high heat until crumbly but not yet cooked through, about 5 minutes. Add sausage, onion, and garlic; cook and stir until meat is no longer pink and onion is translucent, 5 to 7 minutes. Drain grease.

  5. Transfer beef and sausage mixture to a large pot over medium-low heat. Add water, corn, pinto beans, diced tomatoes, diced tomatoes with chile peppers, and mixed vegetables. Stir in potatoes, cumin, chili powder, salt, and pepper.

  7. Cover and simmer, stirring occasionally, for a minimum of 1 hour; the longer it cooks, the better it gets.

This was a really delicious stew. Definitely a keeper! The only thing I did different was eliminate the second can of corn and used extra mixed vegetables. I think next time I’ll replace half of the water with vegetable broth and maybe add some tomato sauce to thicken it up some.

I lived in Texas for around ten years, so I’m used to recipes like this. I made it according to the Instructions in the recipe, and very much enjoyed it! The only difference is I used dried pinto beans, rather than canned beans. I soaked the beans overnight and cooked them in a slow cooker for ten hours.

My family loved this! I added beef bouillon cubes with the water. Added what frozen veggie mix I had on hand. Someone added cayenne pepper and so did I. Just a few shakes but it sure gave it that little kick. Keeper recipe for sure.

I drained the corn and omitted the frozen veggies. I also substituted a portion of the water with chicken broth. I didn’t have any garlic on hand, but some of the canned tomatoes had roasted garlic in it, so I used this can. After browning the meat, I put everything on LOW in the crockpot for 5 hours. The only complaint I have is that it wasn’t long enough for the potatoes to get soft – but since I didn’t exactly follow the recipe, I didn’t decrease the stars. Otherwise, it had the right amount of spice, a good consistency and the family liked it.

Delish! I like spicy so I added jalapenos. I omitted the potatoes to make it a little more keto friendly. I love crock potting so this will definitely be a added addition to my crock pot recipes!

It is one of those comfort dishes that people like. Made it for our mid-week church dinner. Lots of compliments. One man had 3 helpings. Unless I mis-made the recipe, you’ll need a BIG pot. Which is a good thing.

I don’t usually comment if I highly modify, but this was fantastic. I halved the recipe and used what I had on hand for vegetables and beans (black beans, kale, fresh tomatoes, red potatoes, part of a habanero pepper), and added Worcestershire sauce. Great comfort food for a cold night.

It was good but not what I expected. Seemed like an awful lot of corn. Really was nothing more than a beef stew. Enjoyed the taste but probably won’t make it again.
