A traditional family recipe, this. We never have enough when we make them for Christmas. Both the dough and its preparation are simple.

Ingredients

  1. 3 large cloves garlic, minced
  2. 2 teaspoons finely chopped fresh rosemary
  3. 1 teaspoon chopped fresh oregano
  4. 1 tablespoon sea salt, divided
  5. 2 teaspoons ground black pepper, divided
  6. 2 (1 1/2) pounds sirloin steaks, about 1 1/2-inches thick
  7. 1 tablespoon extra-virgin olive oil
  8. 6 cups loosely packed arugula
  9. 2 teaspoons extra virgin olive oil
  10. 1 teaspoon lemon juice
  11. ¼ lemon, sliced
  12. 2 ounces Parmesan cheese, shaved

Instructions

  1. Place a cast-iron skillet in the oven and preheat the oven to 350 degrees F (175 degrees C).
  2. Combine garlic, rosemary, oregano, 1 1/2 teaspoons salt, and 1/2 teaspoon pepper in a small bowl. Rub spice mixture all over the steaks.
  3. Remove the skillet from the oven and add 1 tablespoon oil. Add steak and return to the preheated oven. Cook until steaks is browned on both sides, turning after 10 minutes, about 20 minutes total.
  4. Transfer steak to a cutting board and let rest for 10 minutes; then slice.
  5. Spread arugula on a platter and top with steak slices. Drizzle with 2 teaspoons olive oil and lemon juice and top with Parmesan cheese.

This was yummy. I didn’t have fresh oregano or rosemary so I added olive oil to the spice rub and let the dry herbs soften for about an hour. I browned both sides of the steak on the range for 5 minutes on each side, added 2 TBS of butter and then placed it in the oven. We like our steak medium so this added a bit more cook time. I also didn’t have beautiful shaved Parmesan just the green canister kind so I dressed the arugula with a bit of olive oil, salt and pepper and some of the cheese- once the steak was plated I did drizzle with olive oil, lemon juice and more Parmesan. I will make this again. THANKS FOR A GREAT RECIPE.
