Ingredients
- 2 cups uncooked long-grain rice
- 2 cups coconut water (such as Goya®)
- 1 cup water
- 1 tablespoon olive oil
- 1 teaspoon salt
Instructions
- Combine rice, coconut water, water, olive oil, and salt in a saucepan. Bring to a boil; reduce heat and simmer, covered, until liquid is absorbed, about 15 minutes. Do not lift the lid while rice is cooking. Fluff with a fork.
- You can use butter instead of olive oil, if desired.

I’ve made a version of this rice, with coconut water in place of tap, and it is so delicous! If you’re eating rice with a curry or a stirfry, you should definitely make this, but if you’re eating the rice plain some might not (I like it plain!) enjoy it as much.
