Ingredients
- cooking spray
- 2 cups uncooked elbow macaroni
- ½ cup butter
- 2 (12 ounce) cans evaporated milk
- 1 tablespoon ground black pepper
- 3 eggs
- 1 teaspoon salt
- 4 cups shredded Cheddar cheese
- 1 pinch paprika, or to taste (Optional)
Instructions
- Preheat the oven to 425 degrees F (220 degrees C). Spray a 9×13-inch casserole dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain.
- While the macaroni is cooking, slowly melt butter in a large pot over low heat. Stir in evaporated milk and pepper; cook until heated through.
- Whisk eggs in a bowl until smooth. Whisk in about 1/2 cup of the hot evaporated milk mixture, 1 tablespoon at a time, until thoroughly incorporated. Whisk egg mixture back into the saucepan and continue to heat gently, whisking constantly, until milk mixture almost comes to a simmer and the sauce thickens.
- Gently mix in cooked macaroni and salt until combined. Spoon 1/4 of the macaroni mixture in a layer into the bottom of the prepared casserole dish and top with 1 cup shredded Cheddar cheese. Repeat layers three more times, then sprinkle paprika over the casserole.
- Bake in the preheated oven until bubbling, about 20 minutes.

Love this recipe but I add some things… I add some garlic powder to the milk mixture and I add 3/4 of a block of 8oz Velveeta cheese to the milk and create a cheese sauce. Also put some of the shredded cheese to the cheese sauce

ABSOLUTELY PHENOMENALLY DELICIOUS!! The cheese was amazing! To ‘temper’…Add 1 Tablespoon of eggs to a hot liquid and stir constantly, adding another 2 Tablespoons and stirring, until you can dump bigger amounts of egg into the liquid.

I tweeted it a bit for more flavor. I added a bit of cajun spices, granulated garlic, granulated onion, nutmeg, paprika, and cayenne to taste. I was careful not to make it too salty. It was delicious.
Very good, except I. Added half Velveeta cheese with the shredded cheddar
I made no changes to the recipe. What I will do next time is try a different pasta style rather than regular elbows.

I’ve made this several times and my adult children love it, it’s really easy to put together. Excellent for the holidays.
I used 2 eggs instead of 3 and I mixed-up cheese, sauce and noodles in a bowl before putting it in baking pan, than topped with more cheese. Turned out wonderful and so tastey. Thanks for yummy recipe.
This is a great recipe. I did add a small bag of cooked, steamed broccoli and half a bag of Seasoning Blend that has onion, celery, parsley and red and green peppers to it. It was the best Mac and Cheese I have ever made.
Delicious! I topped it with panko with gave it a yummy crunch!

I am in process of baking this dish now. I read the recipe for understanding before I jumped in and each detail was essential. You do have to be patient…and its Thanksgiving Eve and I am exhausted but did want to continue getting a head-start on all my menu items for the holiday. So far so good with this dish, I am eager to see the outcome. I’ll share pics as soon as its done. Z

Very easy, great texture but needed something to pizzaz it up a bit. Was a bit bland. Kids and family enjoyed it all the same
Perfect as written! I mixed different cheeses and added crushed Ritz crackers with melted butter on top. The recipe as written is spot on and you can add additional ingredients to suit your tastes…ham, broccoli….thank you for sharing
This recipe is perfect, if you use the ingredients as listed and follow the instructions as written. Why do so many people write a review that essentially says “I changed everything, substituted ingredients, didn’t follow the directions and it didn’t turn out right. The recipe is no good” That just isn’t helpful AT ALL. If you didn’t make the recipe, don’t rate the recipe. This Mac and cheese technique is a little labor intensive, but delivers a delicious result.
