Ingredients
- 2 large pork chops
- ¼ cup extra-virgin olive oil
- 4 cloves garlic, chopped
- 3 tablespoons dark brown sugar
- 2 tablespoons lemon juice
- 2 tablespoons spicy brown mustard
- 2 teaspoons dried thyme
- 1 teaspoon onion powder
- 1 teaspoon Worcestershire sauce
- 1 teaspoon white wine vinegar
- 1 teaspoon mesquite-flavored seasoning
- ½ teaspoon dried parsley flakes
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions

- Place pork chops on a flat work surface. Slice horizontally through the middle, being careful not to cut all the way through to the other side. Open the two sides and spread them out like an open book.

- Whisk olive oil, garlic, brown sugar, lemon juice, mustard, thyme, onion powder, Worcestershire sauce, vinegar, mesquite seasoning, parsley, salt, and pepper together in a bowl; pour into a large resealable plastic bag.

- Add pork chops, coat with marinade, squeeze out excess air and seal the bag. Marinate in the refrigerator, 6 to 8 hours.

- Increase the amount of marinade if cooking a larger portion.
- To grill chops, preheat an outdoor grill for medium-high heat and lightly oil the grate. Grill chops until nicely browned on each side and slightly pink in the center, about 8 minutes per side. An instant-read thermometer inserted into the center of the chop should read 145 degrees F (63 degrees C). Let rest 5 minutes before serving.

Amazing – I subbed stone ground mustard, and the seeds gave a good texture to the sauce (I boiled the leftover marinade while I grilled the chops). The sauce MADE our dinner.

The best pork chop marinade I’ve ever made! I usually do a honey garlic marinade but for pork chops I like this marinade.

I modified the recipe a bit. I used Colemans dry mustard and Memphis style pork rub and let it sit for 24 hrs in the fridge. Very good, even the wife said so.
We have this marinaded pork at least once a month. Pork chops and Country ribs are so cheap. Tomorrow I’m trying it on chicken. I double the recipe and it is enough for a gallon freezer bag FULL of pork. I usually make 3 bags at a time. I’ll leave one bag in the fridge overnight and the others go right in the freezer. I use liquid smoke, garlic powder and honey Dijon mustard (Walmart $1.50), however, I cut the sugar in half. There is plenty for dinner, work lunches and sliced thin for Chef salads the next night. I personally think they taste better the next day. Very tender and juicy. We’ve had just about every kind of vegetable. Everything goes good with these. I follow the same recipe with my changes every time and I’m still amazed how much I love it each time I make it.
Smelled amazing! I lowered the sugar a little and replaced the mesquite seasoning (didn’t have any) with liquid smoke and all purpose seasoning ( Vegeta).
This is an excellent marinade and a nice change up from the traditional teriyaki type marinade. The only thing I would change is to reduce the brown sugar by 1 -1 1/2 tablespoons. Otherwise perfect as is.

This is the best pork chop marinade recipe I have ever tried! I’ve used it 3 or more times and my grilled pork chops always turn out delicious. I cannot curb my enthusiasm about this marinade. Everyone should try it!

I found it a bit too sweet, I also omitted the pepper because of an allergy. The marinade did make the chops moist after cooking.

I have had a difficult time finding a marinade or rub that makes pork taste good but this is fantastic!! I LOVED my chops! I can’t wait to use it again. It has the right amount of flavor without being too sweet or too salty. Very good!
