Ingredients

  1. ¼ cup red wine vinegar
  2. ¼ cup reduced-sodium soy sauce
  3. ¼ cup olive oil
  4. 1 ½ teaspoons dried parsley flakes
  5. ½ teaspoon dried basil
  6. ½ teaspoon dried oregano
  7. ¼ teaspoon garlic powder
  8. ¼ teaspoon ground black pepper
  9. 5 skinless, boneless chicken breasts, thinly sliced

Instructions

  1. Gather all ingredients.

  3. Whisk vinegar, soy sauce, olive oil, parsley, basil, oregano, garlic powder, and black pepper together in a bowl.

  5. Pour into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, at least 4 hours.

  7. Preheat grill for medium-low heat and lightly oil the grate. Drain and discard marinade.
  8. Grill chicken on the preheated grill until no longer pink in the center, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

This was a perfect marinade for a basic grilled chicken. I cooked several breasts pounded flat and then sliced them and froze it. I just take out what I need to add to a salad for lunch. It makes for great inexpensive premade lunches. It would also be delicious hot, as a dinner. I didn’t have red wine vinegar, so I used a homemade apple cider vinegar. I also used grapeseed oil because I have a bottle of it. The changes didn’t make it any better, but it’s good to know you can substitute with other things you may have on hand.

This was a good basic recipe for chicken marinade. It was flavourful and moist without dominating the flavour profile of the meal (used it for grilled chicken served atop a summer orzo salad.) I used a mix of white and red wine vinegar since i was running short on red… added some onion powder and a tablespoon or so of brown sugar.

I replaced the vinegar with lemon juice because of personal preference. I left the rest as-is. Everyone loved it.

Really amazing marinade. In addition to the original recipe, I added 1/4 tsp of onion powder, 1 tsp dehydrated chopped onion, 1 Tbsp Dijon Mustard and 1 Tbsp Honey. In place of the black pepper, I used Mrs. Dash Table Blend. When I tasted it prior to the mustard and honey, it was a bit too vinegar-y. So I added the honey and then the mustard to bind it together with the oil.

Tried this last weekend. After a short 2.5 hr marinade time, the chicken tasted like vinegar. The seasoning had no personality either. Quite a disappointing waste of time. I’ll stick with the preachings of www.amazing ribs.com: a dry brine, Simon & Garfunkel rub, ( or any of their many other rub recipes, and any one of their different regional USA BBQ sauce recipes.

This was incredible! Really good for working Moms and Dads made marinade night before, put chicken in it in the morning left it all day in the fridge and cooked it for dinner. The best for grilling yet!

Awesome flavour. Oven baked at 380 for 65 minutes in a foil covered dish. Next time I will flip the potatoes from the edges and bottom of dish after 35 minutes for more even browning. Also use some Maoracha mixed with regular mayo.
