Ingredients
- ¼ cup packed brown sugar
- 2 tablespoons rice vinegar
- 2 tablespoons maple syrup
- ground black pepper to taste
- 1 pound thick-cut bacon
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix brown sugar, rice vinegar, maple syrup, and black pepper in a small bowl.

- Place bacon slices on a cooling rack set over a baking sheet.

- Bake in the preheated oven for 10 minutes, turn slices, and bake another 5 minutes.
- Remove bacon and brush both sides with brown sugar mixture.

- Repeat basting every 5 minutes until bacon is browned and crisp, about 35 minutes.

OMG!! There’s a restaurant in our area that serves this bacon with their Sunday brunch. This is served as a standard feature with their Bloody Mary bar option (along with jumbo shrimp) that is to die for. Yes, both treats come with their Bloody Mary. But this bacon is soooo good!
I went through double the ingredients on 1.5 lbs of bacon. I used regular thick cut bacon, but I will purchase bacan twice as thick next time.

I’ve tried several different candied bacon recipes and this is by far the best. Yes it is more time consuming, but it is well worth the effort. I did double the basting glaze and used thick cut bacon. Make sure you line your baking sheet with foil and spray your racks, clean up will be a breeze. Somewhere along the line, maybe midway, I did up the temperature to 375 as a lot of he gets lost with all the opening and closing of the oven door. As soon as they came out of the oven, I threaded them onto these decorative toothpicks for serving., then moved them to waxed paper to finish cooking.
Sooo good! Definitely use THICK cut bacon and double the sauce…..takes a while to get there, but you won’t regret it!
oh and cleanup is horrible regardless of using foil. if you’re going to make it just buy a foil pan you can toss out.
I used a thick cut bacon, and I also increased the maple syrup. But I wanted mine to be kind of booze flavored, so I added a couple tablespoons of bourbon… I don’t drink, so I just bought one of those little shooter bottles. I left out the rice wine vinegar, though. Well, I decided that it was pretty good. That first bite makes you say, “Hmmm, what is that flavor in there?” And then it hits you…BOOZE! I will try it both ways when I make it again. Thank you for the great recipe! ??
The only ingredient I changed was the cut of bacon. I made this in my GoWISEusa air fryer. 400 degrees F for 12 minutes total. I started by cutting the bacon in half and air frying it for 2 minutes, turned it over for 2 more minutes and then started turning and basting every 2 minutes.

I made it and it was awesome! Like several others I recommend you make much more of the mixture so as to have more to baste throughout. Also, I salted them with a brown sugar/black pepper mix before serving! Huge hit!

Great recipes! Turned out perfect. Tedious to make but worth it to eat. Try adding a little liquid smoke and sriracha for a little Smokey heat.
I used the bacon as a sweet garnish to some spicy bloody mary cocktails.
Here are a few suggestions: A little less than 1 lb (thick cut) fit on my oven rack. Lining the baking tray in foil is a super good idea for easy clean-up. I doubled the sugar and syrup, but not the vinegar. Use a basing brush to apply the glaze. Don’t flip and baste the bacon every 5 minutes. That’s way too much work and you will lose most of your glaze if you flip too quick. I flipped and glazed about every 10-15 minutes. Using thick cut bacon, I think I flipped the bacon 3 times, so a total bake time of less than 1 hour. Last suggestion, let the bacon sit and cool completely (30 mins?). It was much better after the sugar hardened a little bit.
The rice vinegar really makes this recipe! The second time that I made it I used honey instead of Maple syrup and added some sriracha. Delicious both ways!
