I made this healthful, straightforward soup in the Vitamix. Simple to convert to a vegetarian or vegan diet by using non-dairy milk and/or vegetable broth. If you want your soup to have more solidity, you can save some of the microwaved broccoli and potatoes and add them after blending. Enjoy!

Ingredients
- 1 ½ teaspoons olive oil
- ½ small onion, diced
- 2 potatoes, diced
- 1 head broccoli, cut into florets
- 1 cup milk
- 1 cup chicken broth
- ⅛ teaspoon ground black pepper
- ⅛ teaspoon sea salt
- ⅛ teaspoon ground ginger
- ⅛ teaspoon ground thyme
Instructions
- Heat olive oil in a skillet over medium heat; saute onion until translucent, 5 to 10 minutes.
- Spread potatoes and broccoli onto a microwave-safe plate. Cook in microwave until tender, 4 to 5 minutes.
- Place onion, potatoes, broccoli, milk, chicken broth, pepper, salt, ginger, and thyme in the Vitamix or blender. Start on variable 1, slowly increase to variable 10, and end on high for 4 to 5 minutes. Serve hot.
- This recipe was made specifically for the Vitamix 5200 with the 64 ounce container. I cannot promise the outcome will be the same in a different blender.

Very nice and easy! I substituted yams for regular potatoes and it worked out very well. Also I sprinkled with shredded cheese very sparingly on top and served it. Everyone loved the taste
This came together really quickly — a great way to use up some broccoli that was a bit past prime for fresh eating. Could use more salt for my liking, but that’s easily fixed! I used soy milk and veg broth for dietary reasons.

Squeeze a half lemon and add some dillweed, then it’s perfect.
I followed the recipe but didn’t like it at all. This recipe didn’t have enough flavor. I would suggest first oven-roasting and seasoning the potatoes + broccoli. Then add some other seasonings in the soup… but overall, this just missed the mark.

it was a great easy quick recipe with a surprisingly nice flavour (was a little weary of the broccoli and ginger together). I omitted the milk, and just used more broth (chicken). Yummy!
I don’t like Broccoli so I can’t give this a 5 star rating. I made this for someone else who liked it. The Vitamix works great with this recipe. The only change I made was not use as much onion as it calls for. I just thought it would overpower the flavor of the Broccoli. Try it!!
