Spam and Green Onion Casserole

A cheesy, warming dish that the whole family will like can be made using pantry staples and a few fresh ingredients. Although it contains RO*TEL and a can of mild green chile peppers, the dish isn’t particularly fiery; if you prefer it that way, use hot RO*TEL and peppers. There wouldn’t have been a night two without this pantry chicken casserole, so I had to keep it a secret! This simple pantry dinner is completed with a loaf of crusty bread and a green salad.

Ingredients

  1. cooking spray
  2. 1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), chopped
  3. 1 cup chopped green onion
  4. ¼ cup butter
  5. 1 (5 ounce) package garlic croutons
  6. 8 ounces shredded Cheddar cheese
  7. 2 cups milk
  8. 8 eggs, beaten
  9. 1 tablespoon prepared mustard
  10. ½ teaspoon salt

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Spray a 9×13-inch baking dish with cooking spray.
  2. Cook luncheon meat in a skillet over medium heat until evenly browned; drain. Stir in green onion; reduce heat to low.
  3. Melt butter in a microwave-safe bowl in the microwave, about 30 seconds. Layer croutons on the bottom of prepared baking dish; drizzle melted butter and sprinkle Cheddar cheese over croutons. Spread luncheon meat mixture over Cheddar cheese.
  4. Whisk milk, eggs, mustard, and salt together in a bowl; pour over luncheon meat mixture.
  5. Bake in the preheated oven until golden brown and set, about 40 minutes. Remove from oven and let stand 10 minutes before serving.
  6. You can add a light coat of syrup to the top of the casserole when serving. Usually done for finicky eaters that just don’t like what they see.

For me, the Spam flavor was very overpowering. I added some chives and half of a red pepper to add some flavor. I used little ramekins instead of a bigger mold. Had to cook the casserole for much longer.
