This is not quite a slaw and not a traditional salad; it’s plain delicious! A tangy BBQ sauce dressing is the perfect choice to complement the collards, crispy bacon, tart green tomatoes and sweet carrots.

Ingredients
- One 1-pound bunch collards
- 2 tablespoons olive oil
- 1/4 teaspoon kosher salt
- One 4-ounce jar sliced pimientos, drained and coarsely chopped
- 4 slices bacon, cooked until crisp and crumbled
- 2 medium carrots, peeled and shaved into ribbons
- 2 green tomatoes, diced
- 1/2 small red onion, sliced
- 1/3 cup Carolina barbecue sauce (mustard-based sauce)
- 1/4 cup olive oil
- 1 tablespoon honey
- 1 tablespoon apple cider vinegar
Instructions
- Thinly slice the collards and place in a serving bowl. Add the oil and salt and massage the collards until well coated (see Cook’s Note).
- Make the vinaigrette: Whisk together the barbecue sauce, oil, honey and vinegar until smooth.
- Add the pimientos, bacon, carrots, tomatoes and onion to the collards. Drizzle with the vinaigrette. Serve immediately or refrigerate until ready to serve.

I love Ms Brown’s recipes! This salad is fabulous and a great way to use and enjoy collard greens. And the dressing….Wow! I had never used a mustard based BBQ sauce before and it really takes this salad to a whole new level. I used 1bunch of collard greens and found that 1tablespoon of oil was plenty to massage the greens. The recipe calls for 2 tablespoons so I adjusted the oil to my liking. Everyone loved this salad and I found that the dressing is also good on grilled or baked meats. Try this salad, you won’t be disappointed!
I was craving collard greens but wanted to try it a different way. Pretty good!!! I can’t believe I forgot to cook the bacon. Geez!!
