Rosemary and Cheddar Soda Breads

Ingredients

  1. Neutral oil, for oiling the baking sheet, optional
  2. 1 1/4 cups whole-wheat flour
  3. 1 1/4 cups self-rising flour, plus more for dusting
  4. 1/2 teaspoon baking soda
  5. 1/2 teaspoon salt
  6. 1 packed cup grated Cheddar (grated on the large holes of a box grater)
  7. 1 tablespoon finely chopped fresh rosemary
  8. 1 1/4 cups buttermilk

Instructions

  1. Preheat the oven to 400 degrees F. Lightly oil a baking sheet or line with parchment paper.
  2. Sift the flours, baking soda and salt together in a bowl. Stir in the Cheddar and chopped rosemary. Make a well in the middle. Add the buttermilk and, using a fork, mix until just combined. This will give you a soft, sticky dough, which makes a nice moist loaf. With floured hands, divide the dough into 4, scrape each one onto the prepared baking sheet and pat into a light round. Using a chef’s knife, deeply score each soda bread with a cross on top (this will allow the heat to penetrate the center of the dough).
  3. Bake until the breads are dark golden all over and sound hollow when you tap the bottoms, about 30 minutes.

These are absolutely delicious and so so easy. I use freshly chopped rosemary and a nice sharp cheddar cheese and they had loads of flavor! They were perfect with a homemade vegetable soup I made for lunch. I actually used my stand mixer to mix these up. I just used the mixer to mix the dry ingredients then I added the buttermilk until the dough was soft and shaggy like the instructions described. Patted them out into 4 and baked them up up quick. Will be in my regular routines and I’m already thinking of other flavor combinations. Can’t wait to see other recipes from this English chef!

This soda bread was easy to prepare but rather bland. I would not make this again.

This was so quick & easy to make! The flavor was great, too! I’m not a huge fan of rosemary so I may reduce it a touch next time. And try other flavors! I will definitely make it again and again!
