Dijon Vinaigrette

This simple Dijon vinaigrette will become your new go-to salad dressing.

Ingredients

  1. 2 tablespoons white wine vinegar
  2. 1 tablespoon Dijon mustard
  3. Kosher salt and freshly ground black pepper
  4. 1/2 cup extra-virgin olive oil
  5. 1 to 2 teaspoons chopped fresh tarragon, optional

Instructions

  1. Whisk the vinegar, mustard, 1 tablespoon water, 3/4 teaspoon salt and a few grinds of pepper in a small bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing. Stir in the tarragon if using.

I went looking for a dijon vinaigrette like at my favorite restaurant and this is it!  Tart and perfect over greens!  I used 1/2 tsp dried taragon
