Breakfast Casserole

This is an ideal breakfast or brunch to assemble up to a day ahead and bake off in the morning. Healthy cooking doesn’t always mean using low-fat products. The full-fat Cheddar and Parmesan together are so satisfying in this easy casserole that a little goes a long way, and they’re a terrific complement to lean turkey sausage and spinach.

Ingredients

  1. 8 ounces spicy or sweet turkey sausage links, casings removed, meat crumbled
  2. 2 scallions, sliced
  3. 6 large eggs and 6 large egg whites
  4. 1 3/4 cups 1-percent milk
  5. Kosher salt and freshly ground black pepper
  6. One 9-ounce package frozen chopped spinach, thawed and drained of excess liquid
  7. 3/4 cup shredded Cheddar
  8. 1/2 cup grated Parmesan
  9. 1/2 whole wheat baguette, cut into 3/4-inch cubes (about 4 cups)
  10. Cooking spray

Instructions

  1. Heat a large nonstick skillet over medium heat. Add the turkey and scallions and cook, stirring to break up any large chunks, until browned and cooked through, about 10 minutes. Remove from heat and let cool slightly.
  2. Whisk the eggs, egg whites, milk and 1/2 teaspoon each salt and pepper in a large bowl until combined. Add the cooked sausage, spinach, cheeses and bread and toss to distribute the ingredients evenly.
  3. Spray a 3-quart casserole dish with cooking spray. Spread the egg mixture evenly in the dish. Cover and refrigerate for at least 6 hours or preferably overnight.
  4. Preheat the oven to 350 degrees F. Bake the casserole, uncovered, until set and lightly browned on top, about 30 minutes.

This is a great base / basic recipe to create a terrific breakfast casserole. As usual with many recipes I turn it into a pantry raid. . I had some home made Italian herb bread; country pork sausage; 1/2 bag frozen spinach; 1/2 bag frozen 3 peppers; and of course eggs, whole milk and plenty of cheese. Turned out great. I agree with others – patience is key. I baked at 350 for 50 minutes and let it sit for 10 minutes.

Family loved it. Instead of frozen spinach I chopped up 9 oz of fresh greens that I had on hand (baby chard, kale and spinach) and used 10 whole eggs, and I added about 8 oz of sliced mushrooms.

So good. I cooked for about 45 mins tho. Could have probably even gone another few minutes. It was set but not browned. Still delicious

This was so delicious!  I followed a reviewers tip on the egg whites. I use my hand mixer with the whisk attachment and whisked the egg whites until they were light and fluffy.  I also used the hand mixer with the whisk attachment to whisk the eggs and milk mixture. I then folded in the cheese, spinach, bread  and turkey sausage. once that was mixed well I lastly folded in the egg whites and mixed until combined. I cooked my frozen spinach and drained it really well before adding. I also use the entire 16 ounce package of sweet turkey sausage links.  When I measured the bread cubes for 4 cups,  I ended up using almost 3/4 of the whole grain baguette.  I did not realize this had to be sat overnight when I went to make it this morning. Once everything was combined I placed the assembled casserole in the fridge for about 1.5 hours before cooking.   I cooked in the middle of the oven in a 9×13 glass dish for 35 minutes. Delicious and the casserole was fluffy.  taking the casing off the sausage was a breeze, I thought that was going to be really hard. Recommend this dish and I will make this again.

Healthy?????!!!!! The cholesterol is 35 ml over the daily recommended amount.  NOT healthy for heart compromised folks.

This is so delicious!  I did change a little bit of the recipe – I added 1# of sausage instead of 8 oz. .

If you use a deeper casserole dish, allow 50 – 60 mins. of cooking time. We all loved it! Definitely recommend it.
