Black and White Keto Fat Bombs

This snack is packed with filling fat and has the texture of cold and creamy fudge with only 1 gram of sugar per serving. Pair it with a keto-friendly shake for a boost of protein.

Ingredients

  1. 2 cups slivered almonds
  2. 1 cup virgin or extra-virgin coconut oil
  3. 1 to 2 tablespoons of your favorite low-carb powdered sweetener
  4. 2 teaspoons sugar-free vanilla extract
  5. 1 teaspoon orange zest
  6. Small pinch kosher salt
  7. 2 tablespoons unsweetened cocoa powder

Instructions

  1. Line a 12-cup mini muffin tin with mini liners.
  2. Pulse the almonds, oil, sweetener, vanilla, zest and salt in a food processor until coarsely smooth. Remove half to a small bowl and stir in the cocoa powder. 
  3. Fill half of one of the liners with the vanilla mixture and then quickly fill the other half with the chocolate mixture. (It should remind you of a black and white cookie.) Repeat with the remaining vanilla and chocolate mixture. Tap the tin on the counter a few times. 
  4. Freeze until solid, about 30 minutes. You can remove the liners if you’d like. Refrigerate in an airtight container for up to 5 days.

Four stars really? The picture looks like fluffy little brownie bites, but I can you assure you they are not. This is a hard frozen snack of grease chocolate.

I had a cup of unsalted almonds, ugh I hate what I mistakenly grab unsalted nuts, and 1/2 cup of coconut oil. So, I thought I would give this a try. I would suggest chopping/blending the almonds up first, otherwise you may end up with large chucks that are unpleasable. After tasting the first mix, it needed more Erythritol. It tasted like crunchy Nuttella. I spread mine out on a small cookie sheet and froze it. After while, I cut it up in the small squares.

They tasted ok, not great. I think maybe adding some heavy whipping cream would give it a better texture, not so gritty.

They taste super good! However, nutrition info is necessary. I can’t make these again because I don’t know how many carbs/far are in one. This would be so much better with that info. Overall, these tasted good

Net 2.2 – 4.2 each (depends on sweetener). My calculations: using Stevia Clear drops: net 2.2 carbs; 274 calories; fat 28.3; fiber 2.3; carbs 4.5. (Use this as your base to calculate with different sweeteners.) Using 2TBSP monkfruit net 4.2 carbs; 274 calories; fat 28.3; fiber 2.3; carbs 6.5. To calculate: I use fitbit.com to track food. You can put in all the ingredients for a recipe to see overall nutritional info and then divide by servings. I then use this info to create my own food in my tracker with the single serving info. If Fitbit doesn’t have an ingredient usually nutritiondata.com will. Worth it if it’s a good recipe I will eat it all the time. Hope this helps. Note: using liquid drops versus granulated sweetener changes the mouth feel. Adding 2tsp zest helps cut the oil some. Each tsp zest net.3 carb. Hope this helps.
