Sausage and Pepper Sliders

Ingredients

  1. 1 1/4 pounds sweet Italian sausage, casings removed
  2. 2 tablespoons olive oil
  3. 1 orange bell pepper, sliced
  4. 1 large shallot, sliced
  5. 1 clove garlic, sliced
  6. 8 ounces tomato sauce (store-bought or homemade)
  7. 8 slider buns or small potato rolls, split, lightly toasted if desired
  8. 2 tablespoons coarsely chopped flat-leaf parsley

Instructions

  1. Form the sausage into eight 1/2-inch-thick patties.
  2. Heat 1 tablespoon of the oil in a medium skillet over medium heat. Add the peppers, shallots and garlic and cook, stirring occasionally, until soft, about 8 minutes. Add the tomato sauce and simmer until slightly thickened, about 3 minutes.
  3. Meanwhile, heat a large nonstick skillet over medium-high heat. Add the sausage patties and cook, turning once, until golden brown on both sides and cooked through, about 4 minutes per side.
  4. Place the patties onto the bottom buns and top with some of the pepper mixture and a sprinkling of parsley. Top with the top buns and serve immediately.

It was simple and very tasty. I felt it needed a little bit of something on the bread. I tried some dijonnaise, just on one side. It went really well with the sweetness of the peppers and the fat in the sausage.

I made this for my notoriously picky husband who loves grilled Italian sausage.  It’s too gloomy to grill them, so I suggested this.  After thinking about it for a minute, he said “sure, I’ll try it, but only if you add some mozzarella cheese”  Oops, no mozzarella, but I did have a bag of the 5-Cheese Italian Blend.  If you love the idea of this dish, add the cheese!  I had spicy Italian sausage, and some Pizza Sauce that I simmered for a while with a parmesan cheese rind, and put them on Savory Butter Kings Hawaiian Rolls.  He has agreed that he now has another dish with that he will eat!
