Ingredients
- 24 ounces multicolored creamer potatoes, halved lengthwise
- 1/4 cup olive oil, plus additional for drizzling
- 1 1/2 teaspoons garlic salt
- 1/2 cup mayonnaise
- 1 tablespoon chopped fresh chives
- 1 tablespoon chopped fresh dill
- 1 tablespoon chopped fresh parsley
- Kosher salt and freshly ground black pepper
Instructions
- Preheat the oven to 425 degrees F. Place 2 stacked rimmed baking sheets in the oven and let them heat with the oven (stacking them helps the pans hold the heat).
- Toss the potatoes with the oil and 1 teaspoon garlic salt in a bowl. Remove the heated pans from the oven and arrange the potatoes in an even layer, cut-side down, in the top pan. Return the pans to the oven and bake for 15 minutes, then flip the potatoes and bake until both sides are toasted and brown, another 15 minutes.
- Meanwhile, add the mayo, chives, dill, parsley and remaining 1/2 teaspoon garlic salt to a food processor and pulse until chunky.
- Smear the aioli on the bottom of a serving platter. Pile the potatoes on top of the aioli. Drizzle with more olive oil and season with salt and pepper.

So good, great tips to make potatoes regardless of aioli. The aioli is amazing however I will cut ingredients in half so that I don’t waste any of this scrumptious addition in the future. STAPLE IN MY KITCHEN!
PERECT crispy potatoes. I used the double pan but realized I should have just used my cast iron. AND THAT SAUCE! I used so much more than listed since while watching the show it was a lot more than listed above (gave 4 star and not 5 because of this). Pulled ingredients from my garden and it was soooo good and will use with other dishes i.e. chicken, potatoes, shrimp!
1TBSP each of 3 different herbs? And only a 1/2 cup of mayo? Interesting, since I saw at least a HALF a cup of herbs being chopped, and probably a CUP of mayo in the FN video. Totally misleading.

Loved the mayo mix under the pile of roasted potatoes! I plan to make this again for Christmas dinner this year.
I had potatoes roasting in the oven when this episode aired, so I mixed up the aioli while they were baking. I have never added anything to my potatoes, but I am hooked now. The aioli definitely took the potatoes beyond the ordinary.
I did the two sheet pan trick and it worked great. Next time I will add more seasoning
