Ingredients

  1. 1 cup brown sugar
  2. 1 cup (2 sticks) butter
  3. 1 egg
  4. 2 cups all-purpose flour
  5. 1 teaspoon vanilla
  6. 1/2 teaspoon salt
  7. 6 to 8 ounces semisweet chocolate chips
  8. Assorted toppings as needed: chopped granola, chopped nuts, colored sprinkles, mini marshmallows, crushed graham crackers, chopped candy, caramel sauce

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Mix together the brown sugar and butter in a large bowl. Add the egg and mix together. Add the flour, vanilla and salt and mix together well. Spread the dough onto a baking sheet to a thickness of 1/4 to 1/2 inch.
  3. Bake until slightly brown, 15 to 18 minutes. At this point, pull the sheet out of the oven and sprinkle the chocolate chips evenly over the top. Return to the oven for 1 minute. Remove and spread the melted chips over the top. Sprinkle on the desired toppings, and then chill to set. Cut into squares.

Amazing, they are such good shortbread chocolate covered cookies. My family loves them and it is a lot of fun decorating them with fun candies! I recommend putting in a bit more vanilla than she says though, overall an amazing recipe. Thanks Ree! 🙂

Made this during social distancing.  Saw them in my Facebook feed and had to make them immediately. I had everything on hand.  Easy to make and delicous.  I used choc. and peanut butter chips and mini M&Ms.

These are amazing! Followed directions exactly. I used a 9 1/4″ x 13″ cookie sheets with sides and sprayed with Pam. My toppings were chopped pecans, Heath bar, Reese’s, and marshmallows. I only had milk chocolate chips in my pantry so used those for the spread rather than semi sweet. I used a small offset metal spatula to spread the partially melted chocolate chips. Perfect and delicious!!!

I had trouble when I went to spread the melted chocolate on the baked cookie – my cookie base totally crumbled and ripped up. Any suggestions? These are adorable when Ree makes them
