Ingredients
- 1 egg
- 2/3 cup all-purpose flour
- Salt
- 1 cup whole milk
- Butter, for pie dish
- 1 cup grated Cheddar
- 2 ounces small chorizo or pepperoni slices, about 3/4-inch diameter, optional
- Special equipment: 1 round ovenproof pie dish, 8 or 9 inches in diameter
Instructions
- Preheat the oven to 400 degrees F. In a small bowl, beat the egg with the flour, salt, to taste, and milk to make a smooth batter.
- Butter a round ovenproof pie dish, then stir half the grated cheese into the batter, before pouring it into the dish.
- Bake for 30 minutes. Take the dish out of the oven, sprinkle with the remaining cheese, and add the chorizo or pepperoni, if using, – or anything else – now, too. Return the dish to the oven and cook for another 2 or 3 minutes to make sure it’s heated through.
- Once the cheese on top is melted and looks burnished fold on the crustless pizza, take it out of the oven and serve, cut into slices. A green or tomato salad on the side would not be a bad idea…
- Leftover Note:
- Leftovers can be reheated the next day in a hot oven for 8 to10 minutes, but sadly they won’t be as nice as the first time around.

I have made this recipe three times already (in the span of one week) and absolutely adore it — both for its ease to make, and its incredible flavor. Delicious!
I made this tonight and it puffed up like crazy in the middle. I had to push it down to add toppings, then when I cut it open it was soggy and spongy inside. Did I do something wrong or is this the way it’s supposed to be? If so, I am not a fan.
Sorry, but I fail to see how the use of flour in this recipe makes it crustless. This recipe should be renamed to…just a regular pizza.
easy and delicious
Prefer crispy crust, but other than that… this turned out great! Kinda like a “Dutch Apple Pancake… but in a savory pizza form. Made it fancier and added some sauteed mushrooms, peppers, onions, and quartered salami pieces. Yum-o!
Really good and easy. I made this with a gluten free flour blend, and it turned out so tasty. It really does taste like the middle of a grilled cheese sandwich.
So easy, it’s ridiculous! I’ve been wanting someing like this for so long. This is very yummy. The crust reminds me of a quiche. I will be using this recipe with all kkinds of toppings, but…hopefully it can take a few cooked vegetables thrown into the batter too, because I think that would make a great light lunch. Wow!
This is a quick, easy and comforting standby. Extra yum-o if you add chorizo, and I expect pepperoni would be awesome too. You should probably eat it right away, while it’s hot. If you’re expecting it to taste exactly like a pizza, it doesn’t – it tastes like the innards of a grilled cheese, which is pretty good in my book!
My crust came out doughy, like a panake. Its not really that quick with a 30 initial bake time.
Great as either a snack or as a side or even as a main dish. My family loved it!
