Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/3 cup buttermilk
- 4 tablespoons unsalted butter, melted
- 1 teaspoon pure vanilla extract
- 5 large eggs, room temperature
- 3/4 cup sugar
- 1/2 cup semisweet chocolate chips, 4 1/2 ounces
- 3/4 cup dried cherries, roughly chopped, 4 ounces
- 2 cups marshmallow cream
- 1/4 cup bittersweet chocolate shavings
- 12 maraschino cherries on the stem
Instructions
- Special Equipment: 12 capacity cupcake tin, paper liners
- Preheat the oven to 350 degrees F. Line the cupcake tray with paper liners.
- Sift the flour, cocoa powder, cinnamon, salt, baking powder and baking soda in a large bowl. Set aside. In a small bowl, combine the buttermilk, butter and vanilla, set aside.
- Add the eggs and sugar to the bowl of a stand mixer with whisk attachment and beat until the mixture is thick and forms ribbons, about 5 minutes. With mixer on medium speed, slowly add the buttermilk mixture, until just incorporated. Fold in the flour mixture until just combined, then fold in the chocolate chips and cherries. Fill the cupcake tins 3/4 full with the batter. Bake until a toothpick inserted in the center of a cupcake comes out clean, about 15 to 17 minutes. Remove the cupcakes from the tin and cool for 10 minutes. Put a good-sized dollop of marshmallow cream on each cupcake, sprinkle with chocolate shavings and top with a cherry. Serve immediately.

I bake quite a bit and don’t know what I did wrong, but my cupcakes came out dry and I felt like I was chewing cardboard. Suggestions as to what may have happened?
They were very dry cupcakes and stuck to the cupcake wrapper. I don’t think I will be making these cupcakes again. 🙁
Extremely dry and hard cupcake. I would never make these again.
It only makes 9 muffins/cupcakes, not 12; & they take 17-19mins to bake. These muffins are o.k. but not great – they weren’t very moist or as soft as I would have liked. I won’t make these again – I’ve got lots of much nicer choc choc-chip cupcake recipes that come out much softer & more moist than these did & I can just add the dried cherries to them. Also, the cinnamon was very overpowering, I’d say add half the amount.
The cupcakes were moist and packed with chocolate – delicious! I will make the marshmallow topping from scratch next time.
Did not like them at all. They were not at all sweet nor were they moist in the least. I was extremely disappointed.

I made these cupcakes and they were wonderful. I used maraschino cherries, and they were great. I read some of the reviews before making, and would like to let the lady who said they were dry and gave them a 2 star rating. If they’re dry it’s because YOU over baked them. Always bake them the least amount of time first, because they continue cooking when you take them out.
Fabulous recipe! I am diabetic so I made without sugar but with cranberry. They were delicious and very easy to make. I also made a batch without a whisk and it turn out perfect. I also used extravirgin olive oil instead of butter and it tasted great. This recipe is guaranteed success>
I made these cupcakes after watching sunny make them on her show. They are very simple to make. I omitted the cherries for some of the cupcakes because my mom doesn’t like cherries. They were all very tasty.I think I should have baked them for 2 mins less because they were a tiny bit dry. Overall, great cupcakes that are cute to display.
