Ingredients

  1. 1 (2 pound) package frozen hash brown potatoes, thawed
  2. 1 pound pork sausage
  3. 1 small onion, diced
  4. 5 eggs
  5. ½ cup milk
  6. ½ teaspoon onion powder
  7. ⅛ teaspoon garlic powder
  8. salt and ground black pepper to taste
  9. 12 ounces shredded Cheddar cheese

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan; add hash brown potatoes and arrange in an even layer.
  2. Place sausage and onion in a large skillet over medium heat. Cook and stir until the sausage is browned and crumbled, about 10 minutes; drain.
  3. Meanwhile, whisk eggs, milk, onion powder, garlic powder, salt, and pepper together in a large bowl until well combined; pour over the potatoes and sprinkle with 1/2 of the Cheddar cheese. Add sausage mixture on top and sprinkle with remaining Cheddar. Cover with aluminum foil.
  4. Bake in the preheated oven for 1 hour. Remove foil; return casserole to the oven and bake until a knife inserted into the center comes out clean, about 10 minutes. Let stand for 5 minutes before serving.

I love this recipe but I tweaked a little. I used 8 eggs and 2/3 a cup of heavy whipping cream instead of milk. It made it not quite so dry and very yummy

Love this and make it all the time. Quick easy meal for our family in the go or to take to a family in bereavement. However EVERY time I make it I wonder how this could possibly be done in an 8×8 pan! I use 13x9x2, everything else exactly as is, sometimes maybe an egg or two more.

Really enjoyed this recipe. I agree it needed double eggs and milk that other reviewers mentioned. I added jalapeños, sprinkled the hashbrowns with Cayenne pepper and smoked paprika and added crumbled bacon to the top to make it even more unhealthy!

I used extra eggs and made it in a 9 by 13 dish. The family like it, I didn’t. i had to cut the cooking time by 10 minutes, it was a good thing I checked cause it was ready in 50 minutes.

Great basic breakfast casserole recipe which I doctored according to the reviews. I sautéed onions and peppers and set aside. Thaw one half bag of hash browns and then mix in the onions and peppers, garlic powder, salt and pepper and place in a greased 9×13 glass dish. Bake for 20 mins on 400 while you cook 1 lb of sausage with onions. Sprinkle some cheese on the potatoes and then add the sausage layer. Mix 10 eggs, milk, salt, pepper, onion powder and garlic powder together and pour over the potatoes and sausage. Sprinkle with more cheese. Bake covered on 375 for 1 hr, uncover and broil until crispy and browned on top. This is a real keeper for any brunch or dinner! I really think you could substitute riced cauliflower for the potatoes and make it low carb.

I only gave this 3 stars because I thought it was pretty bland. Had I used spicier breakfast sausage, I think we would have liked it more. But I firmly believe in only rating a recipe when I’ve made it exactly as written. Next time I’ll use spicier sausage and maybe add some more onion garlic & sage. The positives were that it cooked well in the time that was recommended, and it looked good when I served it.

Loved it! The only thing I did differently was combined the potatoes, meat mixture, and 1/2 the cheese instead of layering it, and I used 12 eggs in a 9×13 baking dish. I topped it with the remaining cheese. I served it with mild salsa and salsa verde; it was a huge hit. The baking time was a little longer, so be aware that you made need to add some minutes to the cooking time.

Great recipe for any time of the day. I did make some changes. I used more seasoning, onions, milk, and cheese. I also added crumbled breakfast sausage and diced ham and paprika to the egg mix. It was a huge success!

I just tried this recipe today for dinner! With adjustments it was perfect! I doubled the eggs milk and seasonings… Put it in a 9 x 13… I wanted a maple flavour and didn’t have maple sausages, so while cooking the sausage and onions, I candied them with about a quarter cup of 100% maple syrup!! It was simply Divine!

This was very good. I did some things differently though. I used a 9×13 pan, 8 eggs, double milk, and double spices. I put the hash browns in the pan frozen. I made the egg mixture then mixed the sausage and cheese into it, then put the whole mixture over the hash browns and lightly pressed it down. I increased temperature to 400 degrees. I don’t care for layers of cheese, so mixing it all together made it perfect. It was a nice change from the bread cube-egg casserole I usually make.

I made this recipe but I used 7 eggs, and added red and green peppers with the onions. I used maple sausage and the cubed frozen hash browns. I added the extra eggs since it looked like the liquid level should be a little higher, but could also depend on how deep your pan is. I used a 9 x 13 pan. I covered it and baked it as instructed I also added some shredded cheese on top at the end and it came out wonderfully. I recommend this recipe and I will definitely make it again as my family loved It.

I cant even believe you have this recipe on your site. The amount of hash browns barely fit into 8 x 8 pan with no room for the rest of the ingredients so I put it into a bigger pan. The egg mixture did not even begin to cover the hash browns so I ended up doubling it.

This is a five star recipe with the modifications, it is delicious! I used sage pork sausage, 10 eggs instead of 5, and doubled the milk. I used a glass 9×13 pan. I added a diced bell pepper which I wouldn’t want to leave out and I used tater tots instead of hash browns as that’s what I had on hand. For the last 4 minutes I put it under the broiler on low with the foil off. I made this for my family, but it’s so good I want to invite my parents over to share some! I used tater tots, but next time will try it with hash browns.

The first time I made it, it was ok. The second time it was delicious.. I needed to season the Hash brown, had to add more and bacon crumbles onions bellpeppers all colors to egg mix.. Layer hash brown add pepperjack cheese top with turkey sausage add my egg mix then top with mexican style blend cheese bake hr 1.15 with foil, 15 min without foil let stand 5mins.
