Instructions
- Mash 6 hard-boiled egg yolks, 3/4 cup mayonnaise, 1 1/2 teaspoons truffle oil and a pinch of cayenne. Mix in 1 tablespoon chopped jarred black truffles, if desired. Spoon into the egg whites and top with chopped chives.

I’m sorry to say that one day my grandson (age 11) and I made this recipe and the truffled yolks never made it into the beautiful whites. Between the two of us, we savored the truffled yolks directly from the pastry bag that I was going to use to pipe the yolks into the whites. These deviled eggs are the only ones that I have made for a number of years and this is my first review! Thank You, Anne- I love your recipes!

Used 2tsp of chopped truffles in oil, no need to add extra truffle oil and added pramesan crisps to top off yummy (used a dozen eggs)
Used a hand held emersion blender for a smoother mix

So I love the addition of truffle oil but I don’t like this much mayo. I made some eggs as written above and some traditional eggs with 1tsp truffle oil and the crowd liked the traditional better.
This is one of the best Develed Egg recipes I have ever had! We didnt have fresh truffles to shave on top but belive me – we didnt miss them!!! I highly recommend them as I have been craving them since Easter – last week!
Like many people I left out the chopped truffles (because they are so pricey but I’m sure they would taste heavenly. However, they were a big hit using just the oil at my birthday party!
omg!! i have twin 8 yr olds. they HATE mushrooms. i made this recipe today…but used white truffle oil. no shaved truffles…and they licked the bowl!!

This is the most devily delicious recipe ever. It was beyond a crowd pleaser. A few suggestions. I doubled the eggs and would still ease up on the mayo. I added a dusting of cayenne and paprika to the eggs mash and a sprinkle of black pepper. You don’t need the truffles. The oil does the job. I would let it sit for about a half hour before serving to really get the flavor to kickin. Love this recipe!!
I agree with scurnutt…this is the best deviled egg recipe for me too! I didn’t use the additional truffles either…the oil was plenty. When I make them for a party, I always have to make a little extra for my family. The hardest part is not to sneak too many for myself! Thanks Anne.
This is the best deviled egg recipe we’ve ever had. I’d didnt have the black truffles, so we just used the oil. We made it for Thanksgiving and it was AMAZING!!! We will add this to our Thanksgiving menu every year!
