Peking Chicken Pizza

Ingredients

  1. 1/2 pound thin cut (cutlets) boneless, skinless chicken breast
  2. Extra-virgin olive oil, for drizzling
  3. Grill seasoning blend (recommended: Montreal Seasoning by McCormick) or salt and pepper
  4. 2 tablespoons cornmeal or all-purpose flour
  5. 1 package store bought pizza dough (you are making 1 12-inch pie)
  6. 2 to 3 tablespoons sesame seeds
  7. 3 tablespoons plum sauce or Peking Duck Sauce
  8. 3 tablespoons barbecue sauce, any variety or brand
  9. 2 cups shredded Monterey Jack, available on dairy aisle
  10. 2 scallions, chopped in 1-inch pieces on an angle
  11. 1/4 red bell pepper, chopped

Instructions

  1. Preheat oven to 450 degrees F.
  2. Heat a grill pan over high heat. Drizzle oil over chicken cutlets and season with grill seasoning blend or salt and pepper. Grill chicken 3 or 4 minutes on each side. Slice chicken into very thin strips.
  3. Sprinkle a pizza pan or baking stone with cornmeal or flour. Press dough into a pizza shell, working all the way to edges of the pan. Sprinkle the edges of your dough with sesame seeds. Cover the pie with 3 tablespoons each plum sauce or duck sauce and barbecue sauce. Cover pie with cheese. Top with sliced chicken and scallions and red pepper. Bake 12 to 15 minutes, until crisp and cheese is bubbly. Cut into 8 slices.

Delicious, quick and easy! Used pillsbury pizza dough and opted for the plum sauce. Next time I will try a higher ratio of plum sauce to BBQ sauce as the BBQ flavor was much more prominent.

I made this pizza recently just as the recipe was written with the exception of using premium grade ready-made pizza shells I purchased at the market and some leftover barbeque sauce (Neely’s recipe)— this pizza tasted really good! The flavors blended nicely and the pizza looked like a picture when I took it out of the oven. My guests devoured it and said they definitely would like to eat it again. I will make this pizza often. It’s a change of pace and just the ticket when you get a hankering for a touch of oriental flavor! Yummy!

Keeper! Barbeque taste is more dominant than peking. Pilsbury dough was fine for a quick fix. Used up my leftover chicken!

I used this recipe in an international foods contest, and I took home third prize. It taste great, and it looks great. Be aware, it does take longer than 30 minutes- closer to about an hour, but its definitely worth it!

This is a nice twist for pizza. Not overloaded with any one ingredient and bakes up perfect. Use a good plum sauce & a tasty BBQ sauce because that is the flavor beneath the toppings that gives this pizza it’s character. A definite keeper.
