In this modernized take on the classic fruit pizza, almond extract makes all the difference. The addition of kiwi gives the topping a gorgeous color and perfect freshness. For a slightly lighter variation, use low-fat cream cheese. In place of the pineapple juice, you can use any clear juice (apple, pear, peach, etc.).

Ingredients

  1. butter-flavored cooking spray
  2. 2 cups all-purpose flour
  3. ½ cup confectioners’ sugar
  4. 1 cup cold butter
  5. 1 (8 ounce) package cream cheese, softened
  6. ⅓ cup white sugar
  7. 1 teaspoon almond extract
  8. 2 cups sliced fresh strawberries
  9. 1 cup fresh blueberries
  10. 1 kiwi, peeled and sliced
  11. 1 cup unsweetened pineapple juice
  12. ½ cup white sugar
  13. 2 tablespoons cornstarch
  14. 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 12-inch round pizza pan with butter-flavored cooking spray.
  2. Combine flour and confectioners’ sugar in a bowl. Cut in butter with a knife or pastry blender until the mixture resembles coarse crumbs. Press into the prepared pizza pan to make a crust.
  3. Bake in the preheated oven until very lightly browned, 12 to 15 minutes. Cool on a wire rack.
  4. Beat cream cheese, 1/3 cup white sugar, and almond extract until smooth; spread over completely cooled crust. Arrange strawberries, blueberries, and kiwi decoratively over cream cheese mixture.
  5. Mix pineapple juice, 1/2 cup white sugar, cornstarch, and lemon juice in a saucepan until smooth; bring to a boil. Cook and stir until thickened, about 2 minutes. Cool slightly and drizzle over fruit. Refrigerate until chilled.

We are not big fans of the almond flavor so used Lemon extract instead. Also left off the glaze. Perfect!

I made this with gluten free flour and instead of cutting the butter in I melted it. ( was able to use 3/4 cup butter instead of 1cup). Also I found there was way too much glaze so could have cut it almost in half. I didn’t have pineapple juice so just used orange juice. This is a keeper.

I made 1 & 1/2 the dough crust in order to fit across the whole stoneware rectangle pan. Then I also doubled the cream cheese mixture to have enough to spread.

The cookie portion needs more sugar as does the cream portion. It was an OK recipe but we’ll be altering the recipe to taste more like a traditional fruit tart. The topping was a the best part and allowed the fruit to maintain color.

Very easy to make; good taste with little hassle. Unusual crust for a fruit pizza but still good. Cream cheese frosting was quick and yummy too. Didn’t make the glaze but I think it might make the crust soggy.

Wonderful! I didn’t have pineapple juice so juiced two tangerines and added lemonade for the glaze. Only made half the cream cheese mixture and half the glaze amount and it was plenty to cover the crust. Used only fresh peaches sliced thin- yum!

The cookie dough recipe is an easy alternative to bought sugar cookie dough and not as sweet. I made only half of the cream cheese mixture to make the recipe healthier, and it was plenty. My family thought this was delicious!
