Ingredients
- 2 ¼ cups frozen pineapple chunks
- 1 cup lightly packed baby spinach leaves
- 1 (6 ounce) container coconut yogurt
- ¾ cup oat milk
- 2 tablespoons chia seeds
Instructions
- Thaw frozen pineapple chunks for 5 minutes.
- Combine pineapple chunks, spinach, yogurt, milk, and chia seeds in an electric blender and process until smooth, about 2 minutes.
- Feel free to increase oat milk depending on the consistency you want.

There was no need for any sweetner since this is sweet enough with the pineapple. I used Silk coconut milk instead of the oat milk and I omitted the chia seeds only because it was already thick enough. I had to add an additional splash of milk to loosen it up. I will make this often since I always have fresh frozen pineapple in my freezer. Thanks for the recipe.
