Ingredients
- Nonstick cooking spray
- 4 skinless boneless chicken breast halves (5 to 6 ounces each) pounded to 1/2-inch thickness
- 2 teaspoons olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Spray a grill or grill pan with cooking spray and heat to medium-high heat. Rub chicken breasts with olive oil. Combine cumin, salt and pepper and rub spice mixture evenly onto chicken breasts. Grill until grill marks have formed and chicken is cooked through, about 4-5 minutes per side. Remove from heat, let rest for 5 minutes, then slice into 1/2-inch thick slices. Serve over coleslaw, if desired.

Easy and delicious. I doubled the recipe for leftovers for salads etc.
This recipe was certainly easy and tasty. However, my meat thermometer only reads up to 120 degrees. If I try to wait till it reached 165 degrees, it’ll be dry. It has happened before. Can someone please advise of a good thermometer?
Easy quick recipe. Left overs will make nice quesadillas or SW salad.
Simple, delicious. I triple the recipe and have it over salad, yellow rice, riced cauliflower, whatever. My husband just walks by the fridge and eats a piece or two as a quick snack. Goes fast in my house. My picky 9 year old who is a natural clean eater, as well as my non-picky toddlers love it.
Haven’t made this yet but would love to know what everyone served as sides with this.
