Thracian Clay Pot

Ingredients

  1. 1 heirloom tomato, cut into 1/2-inch slices
  2. 1 bell pepper, roasted and chopped
  3. 1/2 cup chopped scallions
  4. 3 ounces Bulgarian feta
  5. 1 tablespoon dried savory
  6. 1 tablespoon extra-virgin olive oil
  7. 4 ounces sliced charcuterie, such as Lukanka or a similar European dry-cured sausage
  8. 2 eggs
  9. 1 serrano pepper, split
  10. Pinch fine paprika, Hungarian or Spanish

Instructions

  1. Preheat the oven to 420 degrees F. Cover the bottom of the clay pot with the tomatoes. Cover the tomatoes with the bell peppers. Add the scallions, then the feta, then the savory. Drizzle with the oil. Cover the lid of the pot and bake, 12 to 15 minutes. 
  2.  Remove the pot from the oven and add the charcuterie. Crack the eggs on top of the charcuterie. Place the serrano pepper on top. Bake until the eggs are cooked, about 5 minutes. Remove the pot from the oven and sprinkle with paprika.

One of the best tasting dishes ever!   I made my own savory including peri peri and smoked paprika so the flavors were so rich and spicy mixed with the juiciness of the other ingredients, it was unbelievable. Must have good bread to sop up juices. Note to self for next time:  do not overcook the eggs!

It is wonderfully delicious and easy to make. I can’t find any cured meats so I used Garlic Sausage instead. It is hearty and filling. Love the tomatoes at the bottom of the pot. Will definitely make it again.

I have made the recipe twice and it is very good. Recently, I have started to use different ingredients my Mexican pot has tomatoes, green chilies, potato, scallions, chorizo, cumin and egg. For Easter I am using tomato, roasted carrots. peppers, potato, feta, scallions, olive oil,lamb, savory, rosemary, mint, egg and a serrano pepper.
