Ingredients

  1. 1 pound chicken livers
  2. 1 egg
  3. ½ cup milk
  4. 1 cup all-purpose flour
  5. 1 tablespoon garlic powder
  6. salt and pepper to taste
  7. 1 quart vegetable oil for frying

Instructions

  1. Place chicken livers in a colander; rinse with cold water and drain well. Blot dry with paper towels.
  2. Whisk egg and milk together in a shallow dish until blended.
  3. Place flour, garlic powder, salt, and pepper into a zip-top bag; shake to combine.
  4. Heat oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C).
  5. Dip chicken livers in egg mixture to coat, then transfer, one at a time, into flour mixture, shaking the bag to coat completely.
  6. Gently place coated livers, a few at a time, into hot oil; cover with a splatter screen and cook until crisp and golden brown, 5 to 6 minutes.

I researched how to make fried chicken first before I made this recipe and read that you should leave the milk and egg and livers out of the refrigerator for a full half hour before you start. I soaked them in buttermilk for 2 hrs. beforehand. I double dipped them too. Fried a pound of bacon and used the grease to fry them in. Next time I will spice up the flour and it will be much better.

For the love of all that is Southern , you must use bacon grease or at least a 50/50 mix. Never salt until right after you remove from the pan. Them butter beans look soooo good in your pic. I also like to fry onions in grease for a bit to flavor, remove them and cook with just the grease. Your Welcomed.

I liked the recipe a lot. I changed it to first dredge in flour, then in egg mixture & then dredge in the flour again. Then drop into the heated oil to fry. The coating stays on the liver better. I was gonna try buttermilk but the milk turned out ok.

Basically the same recipe I have cooked for 50 years except for garlic powder. To eliminate the splattering, poke the livers several times with a fork before frying. I usually do this before battering.
