Cinnamon Apple Cake

Ingredients

  1. 2 cups granulated sugar
  2. 2 cups all-purpose flour
  3. 2 teaspoons baking soda
  4. 2 teaspoons Spice Islands® Ground Saigon Cinnamon
  5. 1/2 teaspoon salt
  6. 2 eggs, beaten
  7. 4 cups finely chopped unpeeled apple
  8. 1/2 cup Mazola® Corn Oil
  9. 2 teaspoons Spice Islands® Pure Vanilla Extract
  10. 1/2 cup brown sugar
  11. 1 teaspoon Spice Islands® Ground Saigon Cinnamon
  12. 1/2 cup butter OR margarine
  13. 1/2 cup brown sugar
  14. 1/2 cup granulated sugar
  15. 2/3 cup evaporated milk
  16. 1/2 teaspoon Spice Islands® Ground Saigon Cinnamon
  17. 1 teaspoon Spice Islands® Pure Vanilla Extract

Instructions

  1. To make cake: Preheat oven to 350°F. Combine granulated sugar, flour, baking soda, cinnamon and salt in a large mixing bowl. In a separate mixing bowl, combine eggs, apples, oil and vanilla. Add mixture to the dry ingredients, and stir just until well mixed. Batter will be thick. Pour cake batter into greased 13 x 9-inch pan. Sprinkle with brown sugar and cinnamon. Bake 50 to 60 minutes, or until a toothpick inserted in center comes out clean. To make Caramel Sauce: Combine butter, sugars, and evaporated milk in medium saucepan over medium high heat. Stirring constantly, bring to a boil for 1 minute. Add cinnamon and vanilla. Cool. Cut cake and serve with caramel sauce. If desired, top with ice cream or whipped topping.

Delicious and really quick and simple. I especially love that you don’t have to peel the apples! I cut back on the brown sugar topping – too sweet for us.

This cake is amazing. Vert moist and full of apples. Everyone at my office loved it. I cut the sugar back by 1/4 cupbecause my apples were sweet. Didn’t make the sauce.
