Mexican Rice

Ingredients

  1. 2 cloves garlic, chopped
  2. 1/2 cup onion, chopped
  3. 1/4 cup red bell pepper, chopped
  4. 1/4 cup green bell pepper, chopped
  5. 2 bags Success® Jasmine Rice or Success® Brown Rice
  6. 1 tsp vegetable oil
  7. 1 small jalapeno, seeded and chopped, optional
  8. 1 tsp cumin
  9. 1 can (8 oz.) tomato sauce
  10. 1 chicken flavored bouillon cube
  11. 1/4 cup fresh cilantro, chopped
  12. Lime wedges, for garnish

Instructions

  1. Prepare rice according to package directions, cooking only 8 minutes.
  2. Heat vegetable oil in a large skillet over medium heat. Add garlic and saute for 30 seconds. Stir in onion, bell peppers, jalapeno, and cumin; cook for 5 minutes. Add tomato sauce and bouillon cube and stir until cube dissolves; add cooked rice and stir until heated through.
  3. Serve topped with cilantro and garnish with lime wedges.

It’s a great “quick” recipe & it tastes good! I was going to cut back on the tomato sauce as has been suggested and… d-uh. I forgot! But yes, maybe 5 – 6oz of sauce would be better. Still, it tasted great!

I loved this recipe will use again, but I will say using less of the tomatoe sauce, like another person had suggested

I thought this rice tasted too tomato-y! It was very gummy, not fluffy like pictured even after fluffing with a fork! Not sure that I’ll make this again or if I do add less tomato paste!

Great taste , I did add two tablespoon of ketchup which added to the great flavor .
