Steak frites get reimagined with a South American twist when delicious skirt steak gets drizzled with a bright green and vibrant chimichurri. Twice-cooked wedges of potato come out fluffy on the inside with a golden crunchy exterior.

Ingredients

  1. 1 1/2 pounds skirt steak
  2. Kosher salt and freshly ground black pepper
  3. 1 teaspoon Cajun spice (this typically is very salty, so adjust additional salt accordingly)
  4. 1/2 teaspoon Spanish smoked paprika
  5. Chimichurri, recipe follows
  6. French Fry Wedges, recipe follows
  7. 1/2 cup chopped fresh cilantro
  8. 1/2 cup chopped fresh parsley
  9. 1/4 cup olive oil
  10. 1 tablespoon red wine vinegar
  11. 2 teaspoons chopped fresh oregano
  12. 1 teaspoon kosher salt
  13. 1/4 teaspoon crushed red pepper flakes
  14. 1 small shallot, finely diced
  15. 3 potatoes, skin-on, each cut lengthwise into 8 wedges
  16. Canola oil, for frying
  17. Kosher salt
  18. Cajun spice, for sprinkling

Instructions

  1. Preheat the grill to high heat.
  2. Sprinkle the steak with salt, pepper, Cajun spice and paprika. Cook on the grill to desired doneness. Slice and serve with the Chimichurri and French Fry Wedges.
  3. Whisk together the cilantro, parsley, oil, vinegar, oregano, salt, red pepper flakes and shallot in a medium bowl. Adjust the seasoning to taste.
  4. Add the potatoes to a bowl and cover with water. Let soak for 30 minutes, changing the water halfway through. Drain and pat dry.
  5. Heat the oil in a Dutch oven fitted with a deep-fry thermometer to 325 degrees F.
  6. Fry the wedges until barely cooked through, about 5 minutes. Remove with a wire strainer to a cooling rack set in a baking sheet and let cool to room temperature.
  7. When ready to eat, bring the oil to 375 degrees F. Fry the wedges again until golden, about 3 minutes. Remove with a wire strainer to the cooling rack and season generously with the salt and Cajun spice.

Chimichurri is delicious. We used flank steak. But I did frozen potato wedges in the oven. The seasoning for the steak is spot on!! Love this new show.
