Strawberry-Rosé Daiquiri

This is the perfect warm weather cocktail. I love a glass of frosé to cool off, and my version gets it rosy hue and sweetness from strawberries. Substitute frozen peaches or your other favorite fruits for a different version.

Ingredients

  1. 1/2 cup sugar
  2. One 16-ounce package frozen strawberries
  3. 1 1/2 cups chilled sparkling rosé wine
  4. 3/4 cup white rum, such as Bacardi
  5. 1/4 cup lime juice
  6. 3 cups ice cubes
  7. Fresh strawberries and lime slices, for garnish, optional

Instructions

  1. Combine the sugar and 1/2 cup water in a small saucepan. Bring to a boil and cook until syrupy, 2 to 3 minutes. Remove from the heat and let cool.
  2. Combine the simple syrup, frozen strawberries, rosé, rum, lime juice and ice in a blender. Blend until smooth.
  3. Divide the daiquiri among serving glasses and garnish with fresh strawberries and lime slices, if desired. Serve immediately.

These make 8 SMALL servings. If you want it more sizable to fit in a margarita glass, it makes FOUR servings. I used strawberries once and raspberries another time. Adjust the simple syrup accordingly. If you plan on making this repeatedly, it’s a good idea to make a big batch of simple syrup and keep in fridge at the ready.
