Salmon-Apple Burgers

Ingredients

  1. 1 cup apple cider
  2. 2 Golden Delicious apples, peeled and coarsely grated
  3. 3 medium shallots (or 1 small red onion), finely chopped
  4. 3 tablespoons apple cider vinegar
  5. 1 tablespoon curry powder
  6. Kosher salt and freshly ground pepper
  7. 1/4 cup finely chopped cilantro, plus whole leaves for topping
  8. 1 1/4 pounds skinless salmon fillet, cut into 1-inch chunks
  9. 1/2 cup panko breadcrumbs
  10. 2 tablespoons mayonnaise, plus more for topping
  11. 2 teaspoons unsalted butter, plus more for the buns
  12. 4 potato buns, split and toasted
  13. Potato chips, for serving (optional)

Instructions

  1. Combine the cider, apples, 2 shallots, 2 tablespoons vinegar, 1 teaspoon curry powder, and salt and pepper to taste in a saucepan and bring to a boil. Cook until the liquid evaporates, about 12 minutes; let cool slightly. Stir in 2 tablespoons chopped cilantro.
  2. Meanwhile, pulse three-quarters of the salmon in a food processor until finely ground. Add the remaining salmon; pulse until chopped. Transfer to a bowl; stir in the panko, mayonnaise and the remaining shallot, 2 tablespoons cilantro, 1 tablespoon vinegar and 2 teaspoons curry powder. Add salt and pepper. Form into four 1/2-inch-thick patties.
  3. Melt the butter in a large nonstick skillet over medium-high heat. Add the patties and cook until browned and cooked through, 2 to 3 minutes per side. Butter the buns and sandwich with the salmon burgers, mayonnaise, the apple relish and more cilantro. Serve with chips.

The salmon burger on its own are great! No need for the apple relish. For company, I service the burger as-is with a brioche bun. For clean eating lunch ideas, I serve the burger on a bed of mixed steam vegetables and a bit of rice; or cube up on toss bowl of salad. I definitely recommend for a weekly meal prep staple

I have been making these for a few years now and they blow me and my husband away each time. I once had a leftover burger earmarked for my lunch the next day and he ate it for his lunch instead instead. A fight ensued— that’s how good they are.

Yes, the recipe is kind of a lot of work for a weeknight meal, but it’s always worth it. One trick I’ve found is to use the food processor to also grate the apples and mince the shallots. Since I have to use it for the salmon anyway, this saves time and space in the dishwasher. Now, the worst part is thoroughly cleaning the cilantro (since it’s typically very sandy/dirty) which is still a lot of work but my love for these burgers beats laziness every time.

Make sure not to get cinnamon apple cider (I’ve made this mistake before, not as good). I’ve also run out of apple cider and used apple juice instead (also not as good as plain cider). Now, I freeze leftover cider into pre-measured ice cubes so I will always be able to make this recipe even in seasons when the grocery store isn’t selling cider. Have I mentioned how much I love this recipe?

These were great! I halved the recipe for two, and I didn’t have apple cider, so I substituted water and a little sugar, which worked fine. As one of the other reviewers commented, this is a messy process, and it would be worth making extra burgers and freezing them for easy future meals.

This was Sooo good but not worth the hassle for four burgers. Cleanup was so much work. I would make a bigger batch next time and freeze the raw burgers.

Ok so this was amazing. I ended up making three burgers instead of four because they just seemed too tiny to put on the buns. My husband was weary because when I say we’re having burgers… he thinks big juicy beefy burgers. When I broke these out He couldn’t stop raving. His exact words were, “ it’s the perfect combination of sweet and savory with a hint of salt. Also I didn’t have cilantro, I used parsley instead and it turned out great. I just didn’t add more for toppings. Cilantro is my fave though, can’t wait to makes these again with it!

Totally awesome. I’ve never done this with fish or made relish before. It worked great and was delicious. I used Tartar instead of mayo and it turned out great.

Excellent! I used 2 cans of salmon instead of fresh. Did not have to dirty my food processor that way. I also got 5 1/2 patties instead of 4. The relish was restaurant quality and very very tasty on top of the burgers. They held together well while cooking. Will be making my salmon patties with this recipe from now on.
