French Apple Cake (or the 3/4 Recipe)

A wonderful, old-fashioned gingerbread-flavored festive treat from the Netherlands. simple, speedy, and excellent Eet smakelijk, as we Dutch people say.

Ingredients

  1. ¾ cup white sugar
  2. 2 eggs
  3. ¾ tablespoon vanilla extract
  4. 3 tablespoons rum
  5. ¾ stick butter, softened, divided
  6. ¾ cup all-purpose flour
  7. ¾ teaspoon baking powder
  8. 1 pinch salt
  9. 4 cups chopped peeled apples, or more taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9-inch springform pan.
  2. Combine sugar, eggs, and vanilla extract in a bowl; beat with an electric mixer until smooth. Mix in rum. Mix in 1/2 of the butter.
  3. Combine flour, baking powder, and salt together in a separate bowl. Add 1/2 of the flour mixture to the egg mixture; mix well. Mix in remaining butter and flour. Fold in apples.
  4. Scrape batter into the prepared pan. Smooth the top gently.
  5. Bake in the preheated oven until top is golden brown and a toothpick inserted into the center comes out clean, 50 to 60 minutes.
  6. You can use a mixture of any apples of your choice. If you use Granny Smith apples, they are tart so you may need more sugar.

When you think of a sweet treat to have with a cup of coffee, this is what you’re thinking of. I used Honeycrisp apples because they’re our favorite. It was light, well-balanced, and pleasant.

I made it today and it was delicious, moist and not too sweet. The only change I made was the vanilla extract. I used a full tablespoon instead of 3/4 tablespoon, and I also added a teaspoon of rum extract. I baked it 50 minutes and it was done, the top was a lovely golden brown, just beautiful! Wish I had taken a picture before I cut it.

Very different cake. Great taste. Very moist I used Coconut Rum. Worked out to boost the taste. Will use again Picture next time. We ate it so fast!
