Nothing says summer quite like slices of watermelon and frozen ice pops, so put the two together for a summery, layered treat. When avocado is sweetened and pureed, it freezes up just like ice cream, making it the perfect ingredient for the green watermelon rind layer.

Ingredients
- 3 cups seedless watermelon, cubed and chilled
- 1/2 cup superfine sugar
- 2 tablespoons mini chocolate chips
- 1/4 cup coconut milk
- 1 ripe avocado, diced
- Juice of 1 lime
Instructions
- Puree the watermelon with 1/4 cup of the sugar in a blender. Pour into a medium bowl and freeze, stirring every 30 minutes, until the puree resembles a slushy mixture, about 2 hours.
- Fold the chocolate chips into the watermelon slush and pour into six 3- to 4-ounce ice-pop molds, filling them about three-quarters full. Insert wooden or plastic (without guards) ice-pop sticks. Freeze until the mixture is just slightly set, about 30 minutes.
- Meanwhile, mix the coconut milk and 2 tablespoons of sugar in a small bowl and refrigerate.
- After 30 minutes, pour the coconut milk mixture on top of the watermelon mixture, leaving a 1/4-inch headspace at the top. Freeze until the mixture is just slightly set, about 30 minutes.
- Right before the coconut milk mixture is just set, puree the avocado, lime juice, 1/4 cup of water and the remaining 2 tablespoons sugar in a blender until smooth and creamy. Top the coconut layer with the avocado mixture and freeze until solid, about 4 hours.
- Let sit at room temperature for about 5 minutes before unmolding.

I have made these watermelon slices on a stick a couple times! They come out looking just like the photo as long as you are careful by keeping the sides of your molds clean as you add the next layer. I had to freeze my mixture for longer in order to have the sticks stay in place. I agree that you need to make more of the coconut layer. And depending on your sweet tooth start with half the sugar. That’s really all you need.
I don’t like watermelon but love the look of these. Anything I could substitute for the red watermelon layer? Strawberries maybe?

This recipe is on point. I would double the coconut recipe as you will want more of that layer. I also added shredded sweetened coconut to the coconut layer. It worked really well. These are really really tasty!
Trying to eat healthy I would substitute fresh pineaple tidbits instead of chocolate chips. And instead of avocado mixture I would use a organic blueberry mixture. I would use raw sugar instead of white (just put in blender for 15 or 20 seconds). So I envision red, white and blue summer independence pops.
I loved these, however I’m the only one in my house who did. One didn’t like the coconut and the other didn’t like the avocado and neither liked the choc chips. Had 2 ice creams molds filled. I used smaller molds. Don’t think I’ll make again or else I’ll change things up. Watermelon was great tho!!
I loved making this! Being a vegan this had all the right ingredients of a refreshing summer treat. Each layer was amazing in its own right. Everyone who tried these pops were amazed! I would highly suggest this recipe, just make sure you freeze the watermelon part a bit longer than it states.
this recipe is THE BOMB !!!!!!! me and my adorable Australian Shepherd puppy Lilly made these pops and when one fell on the ground when I was putting them in the freezer she gobled it up as fast as she could before I could even reach it!
I made these for a July 4th party with friends. I thought they were delicious and very refreshing. I think the next time I will make a change. Instead of using the avocado (which was delicious by the way) I am going to make a mixture using fresh mint. I just don’t think the avocado mixture went that well with this recipe.
