Baked Scallion Grits

If you’ve never tried them, baked grits take on an almost custardy, almost cakey texture and they couldn’t be easier to prepare. We kept it simple and simply added a little bit of scallion, but you could add your favorite cheese, cooked and crumbled bacon or sausage, or herbs.

Instructions

  1. Cook 1 minced garlic clove and 4 chopped scallions in butter in a saucepan until softened. Add a pinch each of nutmeg, cayenne, salt and pepper. Add 2 cups each water and whole milk; bring to a boil. Stir in 1 cup quick-cooking grits; return to a boil. Reduce the heat and stir until thickened, 3 to 4 minutes. Stir in 3 tablespoons butter. Cool slightly. Whisk in 2 eggs. Pour into a buttered 2-quart baking dish. Bake at 400˚ F until golden, 35 to 40 minutes.
