Ingredients
- 2 pieces lavash or other flatbread, halved
- 1 tablespoon extra-virgin olive oil, plus more for brushing
- 1/2 cup grated fontina cheese (about 2 ounces)
- 4 ounces thinly sliced prosciutto, torn
- 4 cups baby arugula
- 1 bulb fennel, halved, cored and thinly sliced
- 2 tablespoons roughly chopped fresh parsley
- 1/2 red onion, thinly sliced
- 2 tablespoons balsamic vinegar
- Kosher salt and freshly ground pepper
- 1/2 cup crumbled gorgonzola or other blue cheese (about 2 ounces)
Instructions
- Preheat a grill to medium. Lightly brush the lavash with olive oil, then grill until marked on the bottom, about 2 minutes. Flip the bread and immediately top with the fontina. Continue grilling until the cheese melts, about 2 minutes. Transfer to a platter and top with the prosciutto.
- Combine the arugula, fennel, parsley and red onion in a large bowl. Drizzle with the vinegar and 1 tablespoon olive oil; season with salt and pepper and toss. Pile on top of the pizzas; sprinkle with the gorgonzola.

We love this one! I’ve used the lavash when I could find it, but the best so far is making flat breads with homemade or store bought pizza dough (found in the deli section). Aside from that, I make this per the recipe but leave out the red onions (we feel like they overpower even if you only use a few) and swap in half or all of a super thinly sliced red, orange, or fiesta bell pepper. I’ve even made a deconstructed version with just the fixings and the flatbread on the side or as made as croutons.

Quick, easy, tasty. I “grilled” the lavash in a sauté pan. Substituted Fontina with a 50/50 Gouda Mozzarella mixture. Substituted balsamic vinegar w/good white wine vinegar and substituted blue cheese with feta cheese. Complete success, will make again soon

Delicious! I used an individual pizza crust. Very good. This will be my go-to to impress guest with a healthy, delicious meal. Don’t skip the fontina. It really added something to this dish.
