Grilled Halloumi Sandwich with Watermelon Relish

Ingredients

  1. 8 ounces halloumi cheese, sliced 1/4- to 1/3-inch-thick
  2. Olive oil, for drizzling
  3. 4 potato rolls, preferably Martin’s
  4. 1 cup diced watermelon
  5. 1 tablespoon minced fresh basil
  6. 1 tablespoon minced fresh mint
  7. 1/2 minced shallot
  8. Kosher salt and freshly ground black pepper
  9. 2 cups baby arugula
  10. Juice of 1/2 lemon
  11. 1/4 cup prepared black olive tapenade

Instructions

  1. Preheat a grill to medium-high heat.
  2. Drizzle the cheese with the olive oil and place on the grill. Grill the cheese until grill marks appear and it begins to melt slightly, about 2 minutes per side. Place the rolls on the grill and allow to lightly toast.
  3. Toss the watermelon, basil, mint and shallot in a medium bowl. Season with salt and pepper. Toss the arugula with the lemon juice in another bowl and season with salt and pepper. Spread one side of the toasted rolls with olive tapenade. Layer the halloumi, watermelon relish and arugula on each roll and serve.

I have never had halloumi cheese before but found it at the grocery store and boy was this good. I did substitute tomatoes for the watermelon as I do not like watermelon and red wine vinegar for the lemon. I will definitely make this again.

OMG. This was delicious. I riffed a little and just tossed the arugula and basil together in a little lemon juice, And slathered some ciabatta bread with some olive tampinada.  I grilled the cheese and the bread in a flat cast iron grill pan.
