Baked Salmon with Honey Mustard Sauce

Ingredients

  1. Cooking spray
  2. 4 6- to 7-ounce skin-on salmon fillets
  3. 1/2 cup low-fat mayonnaise
  4. 1/4 cup Dijon mustard
  5. 1/4 cup honey
  6. 2 tablespoons finely chopped fresh chives, plus more for garnish
  7. Kosher salt and freshly ground white pepper

Instructions

  1. Preheat the oven to 375˚. Line a baking sheet with foil and lightly coat with cooking spray. Lay the salmon skin-side down on top. Set aside.
  2. Combine the mayonnaise, mustard, honey, chives and a pinch each of salt and white pepper in a medium bowl and stir to thoroughly combine. Remove half of the sauce to a separate bowl and set aside for serving. Season the salmon with salt and white pepper and spoon the remaining sauce over the fish, spreading it evenly all over the top and sides of each fillet.
  3. Roast just until the fish is opaque in the center, about 7 minutes. Switch to the broiler setting. Broil the fish until browning in spots, 6 to 8 minutes. (Keep your eye on it to avoid burning.) Garnish with chives and serve with the reserved sauce.

I have recently not been liking salmon until I gave this recipe a try. The sauce compliments the fish so well. I serve it with angel hair alio olio with spinach.

I was planning to make salmon tonight and this recipe popped up in an email. It was delicious. I did use Greek yogurt vs. mayonnaise and scallions vs chives. The recipe is a keeper.

Ever since I seen this …it is definitely one of my favorite ways to cook salmon. LOVE it. But I have a great herb garden and add a bit if chives, and tarragon with the chives. Always make a double batch of sauce. By the way I love this cold just as much as hot. Try it!!!   Sorry I meant (parsley)
